First end of year work do of the season!

A fun local one for the good folk at Odlumgroup in Morrinsville. What an awesome group of people.

For this one we cooked brisket, pulled pork and pulled lamb plus herb and butter potatoes and slaw.

Another awesome barbecue grazing table last night for the teams from BNI Morrinsville and BNI Matamata, NZ.

This one had beef short rib, pulled pork, smoked sausages, queso dip, slaw, street corn salad, pickles, breads, and chips.

Net result: lots of happy people with full stomachs!!

We are on the hunt for hospitality all rounders to join our team.

We have catering and festival events coming up from November and throughout the summer months so we are looking to put together a pool of casual superstars to help prepare, cook, serve and embrace the art of American style barbecue.

Yesterday we hosted our Barbecue and Butchery Masterclass in Cambridge. Thankfully the weather held out, and we had an awesome day of barbecue with an awesome group of people.

We cooked up a whole lot of barbecue as well as covering off some delicious sides and sauces. Not to mention breaking down a whole lamb and talking knife sharpening and maintenance.

Thanks so much to everyone who came along! We hope you enjoyed the day as much as we did.

Last weekend we did this awesome barbecue grazing table for a birthday party in Te Aroha. Sliced brisket, pulled pork, smoked sausages, queso dip plus pickles, salsa, chips, and buns. It was quite the feed, and it was super fun to do something a little different.

Come and join us on Sat Sep 14 2024 at 11:00 AM for our next Masterclass at the Taylor Street HQ Bar at the Cambridge Raceway.

We are going to break down a whole lamb, barbecue lamb shoulder, lamb leg and lamb backstrap as well as tomahawk steaks and whole chicken.

We'll cover some condiments to accompany your barbecue, knife sharpening and maintenance and more.

The bar will be open and featuring the Mile Marker 66 Gin.

We covered pork ribs, lamb ribs, and ribeye steak as well as smoked cheeses and chimmichurri.

Salmon Sundays.

We got a little rustic tonight and did a campfire style Salmon.

Seasoned with chilli, thyme and garlic and served up with smoked cream cheese and toasted thick cut bread. So tasty!!

Last Saturday we had the pleasure of slinging some barbecue treats for a 'Pink Ribbon Soiree - Breast Cancer Foundation NZ' in Hamilton.

We did lamb burgers with beetroot feta whip, delicious deli melts with smoked pastrami and melted swiss cheese, pulled pork tacos, and slider sharing trays.

We had to squeeze the smoker up two levels of a carpark building, which was a bit of nervous fun 😬😅 but once we got in and set up, it was an awesome evening!

Thanks so much for hosting an awesome event and having us along.

Cheers heaps to our awesome helper for giving us a hand! Very much appreciated.

Next up for us is Bootleg Brewery from midday onwards on the 1st June. We've got a great wintry barbecue menu in store for that one, so we'll see you all there!!

This burger is inspired by the Harlem Chopped Cheese. Chopped steak, red onion, sliced cheddar and Al Brown New Zealand Chef's All Purpose Sauce on a grilled brioche bun.

Soooo many great ideas. They all sound delicious, but sadly we can't do them all.

So without further ado, the two dishes that we'll be putting our barbecue spin on at Bootleg Brewery are the Mac N Cheese and Rolled and Stuffed Chicken.

What will the final dishes look like, and what other items will be on the menu? You'll just have to come down to Bootleg Brewery on 1 June and find out.

We'll be slinging pulled pork burgers and smash burgers.
