Last weekend we did this awesome barbecue grazing table for a birthday party in Te Aroha. Sliced brisket, pulled pork, smoked sausages, queso dip plus pickles, salsa, chips, and buns. It was quite the feed, and it was super fun to do something a little different.

BARBECUE AND BUTCHERY MASTERCLASS

Come and join us on Sat Sep 14 2024 at 11:00 AM for our next Masterclass at the Taylor Street HQ Bar at the Cambridge Raceway.

We are going to break down a whole lamb, barbecue lamb shoulder, lamb leg and lamb backstrap as well as tomahawk steaks and whole chicken.

We'll cover some condiments to accompany your barbecue, knife sharpening and maintenance and more.

The bar will be open and featuring the Mile Marker 66 Gin.

This weekend we had the absolute pleasure of running a private barbecue class for an amazing couple in Hamilton.

We covered pork ribs, lamb ribs, and ribeye steak as well as smoked cheeses and chimmichurri.

We had a great time and hope our attendees picked up a few gems along the way.

Salmon Sundays.

We got a little rustic tonight and did a campfire style Salmon.

Seasoned with chilli, thyme and garlic and served up with smoked cream cheese and toasted thick cut bread. So tasty!!

Last Saturday we had the pleasure of slinging some barbecue treats for a 'Pink Ribbon Soiree - Breast Cancer Foundation NZ' in Hamilton.

We did lamb burgers with beetroot feta whip, delicious deli melts with smoked pastrami and melted swiss cheese, pulled pork tacos, and slider sharing trays.

We had to squeeze the smoker up two levels of a carpark building, which was a bit of nervous fun ๐Ÿ˜ฌ๐Ÿ˜… but once we got in and set up, it was an awesome evening!

Thanks so much for hosting an awesome event and having us along.

Cheers heaps to our awesome helper for giving us a hand! Very much appreciated.

Next up for us is Bootleg Brewery from midday onwards on the 1st June. We've got a great wintry barbecue menu in store for that one, so we'll see you all there!!

These non-daylight savings timings are not conducive to evening grilling. But we ain't gonna let that stop us!

This burger is inspired by the Harlem Chopped Cheese. Chopped steak, red onion, sliced cheddar and Al Brown New Zealand Chef's All Purpose Sauce on a grilled brioche bun.

Soooo many great ideas. They all sound delicious, but sadly we can't do them all.

So without further ado, the two dishes that we'll be putting our barbecue spin on at Bootleg Brewery are the Mac N Cheese and Rolled and Stuffed Chicken.

What will the final dishes look like, and what other items will be on the menu? You'll just have to come down to Bootleg Brewery on 1 June and find out.

So we tried something a little different wth our ribs last weekend.

We always hit the sweet and sour pork when we get Chinese takeaways, so it stood to reason a nice sweet and sour sauce would work with pork ribs!!

We seasoned with an SPG rub, cooked until it was set, then wrapped in sweet and sour sauce until done.

At the end, we re-glazed with the sweet and sour.

Needs some refining but was very tasty!!

We had such a fun time at Bootleg Brewery in March that we couldn't wait to go back!! We will be on deck Saturday 1 June...

We had such a fun time at Bootleg Brewery in March that we couldn't wait to go back!!

We will be on deck Saturday 1 June from midday onward slinging some wintry barbecue goodness. Barbecue goodness that we're quite sure will pair perfectly with a hearty ale.

Heather and I met in the New Zealand Army, and both deployed overseas in our time in the service, so ANZAC Day holds a special place in our hearts.

Today we take a moment to remember all the New Zealanders and Australians who fought under the banner of our flags.

If ya didn't know, we love sandwiches!!

Usually when we cook a pork collar, it's for pulled pork. But sometimes it's nice to not take it that far, and take it off while it's still good to slice. It's still beautiful and tender and its perfect for a delicious pork sandwich.

We went a little different on the flavour profile on this one. We used two of rubs. We started with a base layer of The White Rub, the hit it with The Jalapeno and Sweet Orange Rub. It gave the pork a wonderful savoury taste with a nice little zing on the back end. Beautiful.

The sandwich....classic fresh ingredients. Lettuce, tomato and cheese. Thick cut brioche bread was a winner being so soft and tasty.

Go on Hamiltonians. Get down there!

So....we've got this cute little 1.2L ice cream maker we like to play around with sometimes.

We were thawing out a little pre-made pumpkin pie mix and got to thinking.....how would it go as an ice cream. Only one way to find out right.

So we added a little cream and churned away.

To quote Arcot Ramathorn......Mother of God!!

Pumpkin Pie Ice Cream is goooood!

Especially with a solid serving of cool wHip to accompany.
