Beef Caldereta and Beef Kare-Kare are both beloved Filipino dishes, but they each have their own unique flavors and textures! 🍽️

**Beef Caldereta** is a rich, hearty stew with tender beef chunks simmered in a tomato-based sauce, often enhanced with liver spread, potatoes, carrots, and bell peppers. The flavor is savory with a hint of sweetness, making it a perfect comfort food!

**Beef Kare-Kare**, on the other hand, is a flavorful, creamy stew made with a peanut sauce, giving it a nutty and slightly sweet taste. It’s typically served with oxtail, tripe, or beef shank, and accompanied by a side of *bagoong* (fermented shrimp paste) to add a salty contrast.

Two distinct dishes, each offering a taste of Filipino culinary tradition. Which one’s your favorite? 😋

**Filipino Chicken Curry** and **Filipino Sweet and Sour Chicken** are both beloved dishes in Filipino cuisine, but they have distinct flavours, ingredients, and cooking methods:

# # # **Filipino Chicken Curry**:
- **Flavor**: A mild, savoury, and slightly creamy flavour, with a hint of spice. It's not as hot as other curries from other cultures, but it still has a depth of flavour from the seasonings.
- **Key Ingredients**: The dish typically features chicken, potatoes, carrots, bell peppers, and sometimes green peas. The sauce is made with coconut milk, curry powder, garlic, onion, and ginger.
- **Cooking Method**: The chicken is simmered in the curry sauce, allowing the vegetables to cook in the flavorful broth. The coconut milk gives it a rich and creamy texture, while the curry powder provides the distinct yellow color and flavour.
- **Texture**: The sauce is creamy, often thickened with coconut milk, and the chicken is tender. The potatoes and vegetables add a bit of softness and crunch depending on how they’re cooked.

# # # **Filipino Sweet and Sour Chicken**:
- **Flavor**: This dish has a tangy, sweet, and savoury flavour, striking a balance between the sharpness of vinegar and the sweetness of sugar or pineapple.
- **Key Ingredients**: The chicken is usually battered and fried, then coated in a sauce made from vinegar, sugar, ketchup or tomato paste, soy sauce, and sometimes pineapple. Vegetables like bell peppers, onions, and carrots are often added.
- **Cooking Method**: The chicken is first battered and deep-fried to a crispy golden brown. Afterward, it is tossed in a tangy sweet-and-sour sauce made with vinegar, sugar, and other flavoring ingredients.
- **Texture**: The chicken remains crispy on the outside, while the sauce adds a sweet and tangy glaze that makes it sticky and flavorful. The vegetables add color and a crunch to the dish.

# # # Key Differences:
- **Flavour**: Filipino chicken curry is rich, savoury, and creamy with mild spices, while Filipino sweet and sour chicken is tangy, sweet, and savoury with a more vibrant contrast.
- **Ingredients**: Chicken curry uses coconut milk and curry powder, while sweet and sour chicken features a sweet-and-tangy sauce, often with pineapple or bell peppers.
- **Cooking Method**: Chicken curry is simmered in a creamy sauce, while sweet and sour chicken is typically fried first and then coated in sauce.

Nora’s Lutong Bahay - humble beginnings

Our dream and passion was to showcase Filipino food at its best to the people of Whangarei. In 2017 we started out catering for special occasions and on demand food pick up orders from home then night market came along. From our humble beginnings in the markets we opened up our bakery and takeaway shop in Kamo.

Nora’s Lutong Bahay bakes and sells a wide range of pies, specialty breads, traditional Filipino breads and deli, wonderful sausage rolls and tarts for you to take home and share with family and friends.

Not only we offer baked goodies, you can also grab Filipino takeaway rice meals from our shop. There are plenty of choices for your lunch or dinner options.

We can also help you with your catering morning/afternoon tea, or lunch for the office or special events.
