INGREDIENTS:

Filling:

1 lb. ground beef or chicken
1/2 cup raisins(optional)
1/2 cup green peas
1 small yellow onion, minced
1/2 cup beef broth
1 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon ground black pepper
1 teaspoon granulated white sugar
2 tablespoons cooking oil

Dough:
3 cups All purpose flour
1 cup cold unsalted butter, cut into 8 parts
1/2 teaspoon baking powder
1/2 teaspoon salt
3 tablespoons granulated white sugar
6 tablespoons ice cold water
3 cups cooking oil (for frying)

Preparation:
1. Flatten the dough ball by gently pressing the center with your hand against a clean flour-dusted flat surface. Use a rolling pin to

3.Place about 4 to 5 tablespoons of filling in the middle of the dough. Lock the edges by folding on the edges.

3. Heat about 2 to 3 cups of oil in a cooking pot. Deep fry the empanadas for about 3 to 5 minutes or until the color turns golden brown.

Banana Bread .
Ingredients
•2 cups all-purpose flour
•1 teaspoon baking soda
•¼ teaspoon salt
•¾ cup brown sugar
•½ cup butter
•2 eggs, beaten
•2 ⅓ cups mashed overripe bananas
Directions
•Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x5-inch loaf pan.
•Combine flour, baking soda, and salt in a large bowl. Beat brown sugar and butter with an electric mixer in a separate large bowl until smooth. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture until just combined. Pour batter into the prepared loaf pan.
•Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 60 minutes. Let bread cool in pan for 10 minutes, then turn out onto a wire rack to cool completely.

Lemon Yogurt Chiffon
Ingredients :
4 egg yolks
20g sugar
40g vegetable oil
1/4 tsp salt
1 tsp vanilla extract
80g yoghurt
80g cake flour
4 egg whites
50g sugar

Instructions :

Pour egg yolks and sugar in a bowl. Whisk till sugar dissolves.

Add in the rest of the ingredients and stir to combine.

Fold in sifted flour. Mix till smooth.

In another bowl, whisk the egg whites till frothy.

Add sugar gradually and beat until stiff. Fold in 1/3 of the whites into the yolk mixture till well incorporate. Pour in the remaining egg whites and fold gently till well combine.

Pour into 20 cm chiffon mould. Bake at 180 degrees Celcius for 40 to 45 minutes.

Immediately invert it after removal from the oven. Leave to cool. When the cake is cold, remove from the mould.

CUTE AND SPONGY BUNS 😋

Ingredients:
1 cup (250ml) warm milk
1/2 cup (100g) sugar
2 sachets of tradipan
4 cups (560g) all purpose wheat flour
A tray or two
A box of butter or a little vegetable shortening
a pinch of salt
70 g unsalted butter
2 eggs + 1 extra at room temperature
1 tsp vanilla extract
To brush the breads: 1 beaten egg with half a teaspoon of sugar and a brush

Preparation:
1. We start by making a fountain with the flour so that it is like a volcano.
2. Then place 1 teaspoon of vanilla extract, make the warm milk, make the two eggs, apply the two envelopes of tradipan inside, make the sugar.
3. Now with the butter, cut it into pieces and place them around the pan and apply a pinch of salt around it.
4. Start kneading for 30 minutes by whipping hard. After kneading it should have the consistency of a pizza dough.
5. With butter or lard, smeared on the tray, cut 15 balls of dough, they should weigh approximately 15g.
6. Now with the beaten egg, glaze the buns and then put the buns in the preheated oven at 175°C for ten minutes.

This mini strawberry runny cake is delicious in one bite. Super easy to bake and perfectly served warm.

Ingredients :

250 grams/ 8.8Oz unsalted butter, room temperature
250 grams/ 8.8Oz (1cup + 3 tbsp) white granulated sugar
5 Eggs, large, room temperature
250 grams/ 8.8Oz (2 cups) of all-purpose flour
1 tsp baking powder
½ tsp salt
1 tsp pure vanilla extract
Strawberry jam appropriate amount

Instructions :

This mini strawberry runny cake is delicious in one bite. Super easy to bake and perfectly served warm.

Preheat your oven to 350 degrees Fahrenheit then prepare a mini cake mould by greasing then lightly coat with flour. Set it aside. Into a mixing bowl, add 250 grams of room temparature unsalted butter with 250 grams of white granulated sugar.

Mix on medium speed until creamy and the colour turns light and fluffy. With the mixer on medium-low speed, add 5 eggs one by one and beat the mixture well after each addition. The mixture might look a little curdled after adding eggs, this is okay because once you add the flour it will all come together into a smooth batter.

Measure 250 grams of all-purpose flour and ton that add one teaspoon of baking powder and half a teaspoon of salt. Mix the dry ingredients together then add the flour mixture into the butter egg mixture. Mix on low speed as you add the flour until you have a smooth batter. You want to mix the batter just until smooth with no lumps. Do not overmix the batter.

To add flavour, add one tablespoon of vanilla extract and mix for a minute. Pour the batter about a quarter full into the baking mould and add strawberry jam then add more batter to fill the jam to about three-quarters full in the mould. Repeat the same in each of the cake moulds until the batter is finished.

Bake the cake in the 350F preheated oven for 40 to 50 minutes or until golden brown. Once baked, remove from the oven and let the cakes sit in the mould for about 10 minutes then remove and line them on a wire rack. Take a bite to feel the taste of this cake and strawberry.

Serve them warm or cold with a cup of tea or milk.

MAGNUM ICE CREAM

INGREDIENTS :

- 1 can evaporated milk
- 1 can condensed milk
- 1 pack all-purpose cream
- 4 to 5 bars chocolate
- Crushed Almonds( optional)

INSTRUCTIONS :

- Prechill 1 pack of all-purpose cream, 1 can of condensed milk, and 1 can of evaporated milk.

- Pour the chilled 1 pack of all-purpose cream, 1 can of condensed milk, and 1 can of evaporated milk into the blender and mix vigorously until all ingredients are well blended.
Add crushes almonds if you want & mix well. Set aside for later.

- For the chocolate coating, first, prepare and use a double boiler to in melting the bar of chocolates.

- Melt 4 to 5 bars of chocolate (for this recipe, chose the combination of Milky and Dark flavor of Goya chocolate bar).

- Transfer the melted chocolate to a pastry bag or a squeeze bottle.

- Pour a portion of the melted chocolate in an ice candy plastic bag enough to evenly coat the almost full portion of the bag.

- Use a funnel to pour the ice cream mixture inside of the ice candy bag.

- Squeeze tightly by twisting downward and tie the opening of the ice candy bag to seal the ingredients inside.

-Freeze overnight. Serve for merienda or as dessert after a meal.

2. Now sift the flour and a pinch of salt into a bowl. Sift very well so that there are no lumps.
3. Next, pour the previous mixture into the sifted flour and mix it well until the lumps disappear and the mixture is very liquid.
4. Now let the mixture rest for 30 minutes. This is so that the flour hydrates well in the mixture.
5. Now we paint a non-stick frying pan with oil and put it on medium heat, pour a little of the mixture until we fill the whole pan.
6. When the bottom dough comes off easily, we turn it around to brown the other side.
7. Repeat the same procedure until all the crepes have been prepared.
8. Now you only have to fill the crepes with dulce de leche, jam, nocilla, cream, etc.

Ingredients
500 g of strength flour.

25 g of fresh baker's yeast.
250 ml of milk.
2 eggs.
1 pinch of salt.
A spoonful of vanilla essence.

Preparation
For the mass:
1. In a bowl, mix the flour, softened butter, eggs (at room temperature), sugar and salt.
2. We dissolve the yeast in the glass of milk and when it is fully dissolved we add the milk to the bowl.
3. We patiently knead everything until the dough is smooth and does not stick to the hands.
4. We let rest 90 min. until the dough doubles in volume in a dry and warm place.

Preparation:
1. Mix the milk with the sugar and bicarbonate of soda over medium heat, stirring constantly until it boils.
2. Keep stirring until thickened and the candy starts to turn light brown and loosen from the bottom of the pot (about 1 hour or more).
3. Turn off the heat, let cool a little and stir a little more, which will leave it even thicker.
4. Grease a large surface with butter and pour in the fudge.
5. Let cool well and cut into pieces before serving.

MEATPIE RECIPE
Forthe meat Pie dough u need

1kg (8 cups) plain flour
2 teaspoons baking powder
500g (1.1 lbs) Margarine
2 pinches salt
½ cup / 125 ml / 4.2 oz cold water
1egg(optional) if u use egg u need to reduce water

For the meat Pie filling u need:

2 medium Irish potatoes
2 medium carrots
500g (1.1 lbs) minced meat
1 medium onion
2 cooking spoons vegetable oil
2 Knorr cubes or any seasoning
1 teaspoon thyme
2 tablespoons plain flour
1 cup / 250 ml / 8.4 oz cold water
Salt to taste


Directions for preparing the Nigerian Meat Pie

Meat Pie Filling procedure

Peel the Irish potatoes and scrape the carrots, wash and cut these two into tiny cubes.
Wash and slice the onions into tiny pieces.
With your cooker or stove set to medium heat, heat the vegetable oil in a pot, add the diced onions and stir for a bit, add the minced meat and stir vigorously till the minced meat turns pale.
Add 1 cup of water, Knorr cubes and thyme. Cover the pot and once the contents of the pot starts boiling, add the diced carrots and potatoes and cook till everything is well done.
Dissolve 2 tablespoons of plain flour in half cup of cold water and add to the meat pie filling. This tip is so that the meat pie filling does not dry up during baking. It is also what keeps the meat pie filling moist.
Add salt to taste, stir the contents and turn off the heat. Set the meat pie filling aside. Now is the time to prepare the dough for the meat pie.

The meat Pie dough making

Put the 1 kg of flour in a sizeable bowl; add 2 teaspoons of baking powder and 2 pinches of salt. You really do not need a lot of salt for the meat pie dough. The meat pie will get most of its taste from the filling. Mix these dry ingredients very well.
Use a tablespoon to scoop the margarine in small bits into the bowl of flour. The smaller you make the bits of margarine, the easier it will be for you to rub them into the flour.
Use finger tips to rub the margarine into the flour till the mix becomes like crumbs.

Now, start adding cold water in bits while at the same time folding the mix till a stiff ball of dough is formed. You will be surprised at how small quantity of water you need to get the dough stiff. At most, all you need for the 1 kg of flour is half a cup of water.
Knead the dough very well, put back in the bowl and leave to rest for 5 to 7 minutes. This makes the dough more elastic.

Cut, Fill, Fold and Close procedure

Set your oven and leave to preheat while you continue with the meat pie.
Rub margarine or vegetable oil insides of the oven tray and set aside. This is so that the undersides of the meat pies do not burn or stick to the tray during baking.
Break the egg, beat it and set aside, you will need it pretty soon.
Knead the dough some more, roll it out to achieve a 5mm thickness.
Use a cutter, be it the cover of a small pot or a meat pie cutter, to make round cuts on the rolled out dough.
Remove the excess dough, leaving behind the round cuts.
Scoop some meat pie filling into the center of the round cuts, the quantity should be such that you can comfortably close the dough without overflows. Don't worry if you over-filled the first one, you have many meat pies to fill so at some point you will know just the right quantity of meat pie filling to scoop into the dough.
Rub the egg on the inside edge of the cut meatpie dough. This is to ensure that your meat pie is perfectly sealed and does not open up while it is being baked.
Fold one part of the dough to meet the other end and use a fork to press the 2 edges together to close tightly. Place your work of art in the oven tray and repeat the previous step till all the cut out dough is exhausted.
Roll out more dough, cut, fill, close and place in the greased oven tray till all the dough is used.
Rub the egg on the meat pies. This gives the meat pie a golden brown look when done.
Set the tray in the preheated oven and bake for 30 to 40 minutes. This time will depend on the type and heating capacity of your oven. For some ovens, the meat pie will be done in half an hour.

Indications:
1. In a bowl, mix the egg with the sugar.

So here's a treat to have with my coffee.
Every day, while it lasts....

Ingredients
½ cup butter softened
1 cup granulated sugar
2 large eggs
2 teaspoons baking powder
½ teaspoon salt
1 teaspoon vanilla extract
2 cups all-purpose flour
½ cup milk
1 cup semi-sweet chocolate chips

Instructions
Line a muffin tin with paper liners. Lightly grease paper liners with nonstick cooking spray.
In a large mixing bowl, use a hand mixer to cream together butter and sugar, about two minutes.
Beat in eggs until combined. Add in the baking powder, salt, and vanilla and mix briefly.
Add in half of the flour, mix with a hand mixer until just combined, then add in the milk, stirring to combine.
Scrape the bottom and sides of the bowl and add in the remaining flour until just combined.
Add the chocolate chips to the batter and use a rubber spatula to gently fold them in.
Divide the batter up amongst the 12 muffins. Preheat oven to 190C degrees. Let the batter rest while the oven preheats.

Bake in the preheated oven for 20 to 25 minutes, until a toothpick inserted into the center, comes out clean.

Reduce the heat in the oven to 180C degrees after 7 minutes. Watch the muffins closely as cooking times may vary depending on your oven.

Let muffins cool for 5 minutes in the pan before removing them and transferring to a wire rack to cool completely.

Instructions
Preheat the oven to 170 Degrees Celsius .

3. Sift in flour , baking powder, bicarbonate of soda, cinnamon powder, and salt and mix .
Then add the oats and chocolate chips .
