Hawaiian Banana Bread 🍞❤️
Ingredients:
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup unsalted butter, melted
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/4 cup plain Greek yogurt or sour cream
1 cup mashed ripe bananas (about 2–3 bananas)
1 cup crushed pineapple, drained
1/2 cup sweetened shredded coconut
1/2 cup chopped macadamia nuts (optional)
Directions:
Preheat oven: Preheat oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line with parchment paper.
Mix dry ingredients: In a medium bowl, whisk together flour, baking soda, salt, and cinnamon.
Prepare wet ingredients: In a large bowl, whisk together melted butter, sugar, eggs, vanilla extract, and Greek yogurt (or sour cream) until smooth.
Combine batter: Stir in mashed bananas and drained pineapple. Gradually add the dry ingredients, mixing until just combined. Fold in shredded coconut and macadamia nuts, if using.
Bake: Pour the batter into the prepared loaf pan and bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
Cool and serve: Let the banana bread cool in the pan for 10 minutes before transferring it to a wire rack. Slice and enjoy!
