Chilli Cheese Toast ๐ถ๐ง๐๐ฅ
An old favourite from my 20โs, this snack was recently revived by an article in the Hindustan Times, Rude Food by Vir Sanghvi: A true Indian classic.
This is my version and my secret ingredient is Amul tinned cheese! This cheese toast is perfect with โutterly butterly Amulโ - no need for anything fancier.

Nashik Shrimp ๐ฆ๐ฎ๐ณ
I have no idea whether this preparation was invented in Nashik, Maharashtra, India! I learnt it from my mother and she must have picked it up from a local. Who knows?
All the spices are roasted and ground, so there is a fair amount of slogging involved but itโs all worth it! You also use dry coconut in it rather than fresh, and a fairly large number of dry red chillies, which are soaked, dried, roasted and ground - but it's the black pepper that gives this recipe its zing!

Pasta with Sausage Ragรน ๐
Herb and Garlic Sausages are grilled and then tossed in oil which is flavoured with rosemary and slivers of garlic.
It is furthered simmered in a slow cooker for 7 hours which has olive oil, generous glugs of dry white wine and good chicken stock.
We add Gin in place of Juniper berries ๐ and finally served it up with homemade Tagliatelle.

A comforting and flavourful rice dish from Spain.

In an article by The Guardian, Valencian chef Llorenรง Millo is quoted saying, "Paella has as many recipes as there are villages, and nearly as many as there are cooks."

We made our version with an abundance of seafood: clams, prawns and baby scallops (the tiny balls in the photo are scallops!)
_
We also added our own spin on Paella with Tobiko!
Local medium-grained rice and an infusion of saffron completed this version.
_
One plateful of this will transport to Patacona Beach with the waves lapping at your toes, drinking a glass of horchata.

Indonesian Fish Curry ๐

This curry is so much like the Indian or Malaysian version but somehow, has its own distinct taste! ๐
_
It is a blend of many spices including nutmeg (I've never seen nutmeg being used in any of the recipes I've made!) and palm sugar( again, not so common in Indian fish curries) โจ

It has coconut milk and tamarind juice and of course, red chillies! ๐ถ๏ธ
_
Serve it with jasmine rice and imagine that you are on a beautiful beach in Bali! ๐๏ธ

Ragda Pattice.

Bombay street food. It's called Chole Tikki in the north! A popular part of the street food culture in India and also served at fast-food restaurants all over.๐ฅณ

The Ragda is a white peas stew cooked with a mix of spices and the Pattie is a crisp mashed potato cake, served on top of the stew.

Tamarind and Green Chutneys are slathered over the top. The dish is finished off with some finely chopped onions and green coriander.โจ

Teesri Sukke. Dry Curried Clams.

Clams:tiny bits of delicious meat peeping out from behind gorgeously- designed natural shells!

We cooked it with freshly roasted black peppercorns, cardamom, cloves, coriander seeds, cumin seeds and dry red chillies which were ground to a coarse powder. ๐ถ๏ธ
_
We tossed chopped onions in coconut oil till they turned pink, threw in some kokum petals(souring agent), added the spice powder, sprinkled a few tablespoons of hot water and steamed the clams in all of the above. ๐ฅ
_
Finally some fresh coconut and coriander leaves and voilร , it was ready to serve! ๐ฟ

Butter Garlic Crab.

I'm reminded of our several visits to a Mangalorean restaurant in Bombay called Apoorva. ๐ฎ๐ณ
_
While all and sundry flocked to Trishna when coastal seafood became the 'de rigeur' cuisine in the 80's, we continued to eat at Apoorva because we felt it had less hype and more substance, less style and more quality and so on.
_
Many Sunday lunches were eaten there. Prabhat, Ganesh and Vijay were the young lads in charge and they would bring out the freshest fish in different avatars, one better than the other. โค๏ธ
_
But the 'piece de resistance' was always the Butter Garlic Crab which was tossed in copious amounts of garlic and literally drowning in yellow butter. It also had a couple of twists from the pepper grinder and had a few slivers of green chillies. ๐
_
We dunked hot, freshly-baked Pao in it which slurped up the butter, got our hands happily dirty and our mouths unkissable (with sooo much garlic) But boy, was it all worth it! โจ
_
Bottles of chillied Beer was our poison to accompany these lunches. (None of the fancy cockails and other foofaraw like today) ๐ป

Many decades ago, when wild-boar hunting was permitted in India, my father would "hunt" with his buddies.
_
He would, oftentimes, bring home a pickle with the meat of the hunted made by the host's cook.
Subsequently, my mother extracted the recipe from the afore-mentioned cook and tried the same with pork!
It was finger-lickingly scrumptious!๐ฅฐ
_
A couple of weeks ago, I unearthed this recipe from one of my earlier painstakingly handwritten cookbooks(with my mother's recipes) and decided to make it a part of my pickle collection on Jo's Kitchen.

I hope the "feasters" from North India think that this Maharashtrian did a spectacular job ๐ We'll all have done our bit towards national unity ! โ A Pulikuthi Upperi is a Kerala Iyer recipe from the Palakkad region. Made with pumpkin, raw bananas and 'papdi', this is both spicy and tangy, with a dash of tamarind. โ Vegetable Ishtew with Idyappams is very popular with the Syrian Christians of Kerala. We used carrots, green beans and red capsicums. It is a gentle accompaniment to the other spicy dishes served alongside โ "Brinjal Theeyal has its origins in central Travancore and takes me back to my motherโs kitchen โ she would prepare it often. The recipe, like quite a few others in Kerala, involves cooking a garden-fresh vegetable with roasted coconut paste and tamarind. The sharpness of chillies, the creaminess of coconuts and the tang of tamarind form the perfect base for the vegetable" - Chef Reggie Mathew โ Potato Fry. Popular in the whole state.
