The Little Things LLP boasts a locally-developed programme intended to train children to manage and thrive in the home-and-kitchen settings. In our weekly sessions, children take on a variety of experiences and challenges like meal-planning, food preparation (from the market to the table!), food cultures, etiquette, home-science experiments, home-crafts, presentations, and even team projects for the community!

We’re always happy to make sweet treats or savoury goodies with our students… But even more so, when we work closely with the Teachers to use the kitchen as a classroom!
In today’s special workshop, we were intentional about exercising particular social behaviours, and being able to work in teams while following the group’s rules.
I’d say we all scored 💯

You guys achieved all the teachers’ objectives, and then even successfully brought back a box-full of treats!

Spent Children’s Day the best way we know how… Baking up a storm of 300 cookie packs!

Butter vs Oil. Aren't they all the same?!

When it comes to baking, butter and oil are not always interchangeable!
🧈 Butter based cakes may taste better in flavor than oil based cakes.. but love it (buttery aroma) or hate it , you decide!

P.S. Baking is both art and science so here's some science!!🧬 Butter is usually made up of roughly 80% fat + 20% milk solids and water. Since water strengthens 💧💪🏻the gluten in a cake's flour, baking with butter results in a denser crumb and sturdier cake texture! Perfect for tiered cakes!

Should you substitute one for the other when baking? Maybe.. not!

Although both types of sugar adds sweetness to your bakes, brown sugar tends to impart a toffee-like flavour as well!

More than flavour differences, each type of sugar does result in textural differences in your bakes!

Teochew cuisines combine multiple methods of cooking for a single dish such as first steaming, then pan frying / deep frying for both Orh Nee (yam paste) and Ngoh Hiang (fried meat rolls) respectively.

A commonly use ingredient; preserved radish, serves as a complementary condiment to the light tasting Chwee Kueh (steamed rice cake).

Due to abundance of seafood in Fujian China, seafood is a commonly used ingredient in Hokkien Cuisine. 🦐

Last weekend, our self-savvy little chefs learnt how to cook black hokkien mee and fried prawn balls which were well received! 👏🏻

This July to September, join us as we introduce a slew of dialect cuisines to our little chefs, in our weekend Self Savvy Programme "Jiak Pa Buay"!

Ft. Our little 👩🏻‍🍳 🧑🏼‍🍳 in action last weekend, as we began the term with a popular Hakka dish, Yam Abacus Seeds (算盘子).

The use of dried and fermented ingredients is common in Hakka cuisine, with emphasis placed on texture of food. In the making and cooking of these chewy abacus seeds, some dried ingredients used include dried shrimp and dried shiitake mushroom, yummy!
