🍍 Indulge in the tropical bliss of our Mini Pineapple and Condensed Coconut Milk Cheesecakes! These delightful treats feature a buttery biscuit crust topped with a luscious blend of cream cheese, sweetened condensed coconut milk, and crushed pineapple. Finished with a dollop of whipped cream, fresh pineapple, and toasted coconut flakes, they're a taste of paradise in every bite.

Ingredients:

For the Crust:

200g digestive biscuits, crushed 🍪
100g unsalted butter, melted 🧈
For the Filling:

500g cream cheese, softened 🧀
1 cup sweetened condensed coconut milk 🥥
1/2 cup crushed pineapple, drained 🍍
2 teaspoons vanilla extract 🌿
1/4 cup powdered sugar 🍚
For the Topping:

1 cup whipped cream 🍦
Fresh pineapple slices or chunks 🍍
Toasted coconut flakes (optional) 🥥
Method:

1️⃣ Prepare the Crust:

Preheat your oven to 160°C (320°F). Combine the crushed digestive biscuits and melted butter in a bowl until well mixed. Press the mixture into the base of a 12-cup muffin tin lined with paper liners. Use the back of a spoon to compact the crust. Bake for 10 minutes, then let it cool completely.
2️⃣ Make the Filling:

In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add the sweetened condensed coconut milk, mixing well after each addition. Stir in the drained crushed pineapple, vanilla extract, and powdered sugar until smooth and combined.
3️⃣ Assemble the Cheesecakes:

Spoon the filling over the cooled crusts in the muffin tin, filling each cup to the top. Smooth the tops with a spoon or spatula.
4️⃣ Chill:

Refrigerate the cheesecakes for at least 4 hours or until set. For best results, chill overnight to allow the flavors to meld.

Black Forest cheese cake 🍒

Black Forest cheese cake is an interesting variation of the classic. Here, Black Forest cherry meets cheesecake. The delicious recipe with cherries and chocolate glaze is an eye-catcher on every cake table.

INGREDIENTS (For a 26 cm tin)

FOR THE DOUGH

175 g wheat flour (type 405)
90 g icing sugar
20 g baking cocoa
1 pinch of salt
100 g butter
1 egg (size M)

FOR THE CHERRY FILLING

1 jar of cherries (drained weight: 350 g)
2 tbsp cornstarch
1 tbsp sugar
1 pinch of cinnamon

FOR THE CHEESECAKE FILLING

1,000 g low-fat quark
125 g sugar
70 g cornstarch
3 eggs (size M)
1 packet of vanilla sugar (37 g each)
1 tsp vanilla extract

FOR THE GLAZE

200 g dark chocolate
100 g cream
20 g coconut oil

ALSO

Some butter for the tin
Some Flour for the pan
Some flour for working

PREPARATION

Step 1
Grease a springform pan (⌀ 26 cm) with butter and dust with flour. For the dough, sift flour, icing sugar, baking cocoa and salt into a bowl. Add butter and egg and knead with a mixer to form a compact dough. Wrap the dough in cling film and chill for about 30 minutes.

Step 2
Roll out the dough on a lightly floured work surface, press it into the springform pan and pull up an edge. Prick the dough several times with a fork. For the cherry filling, put the cherries in a sieve and collect the liquid. Bring two thirds of the cherry juice to the boil in a saucepan.

Step 3
Use a whisk to mix the remaining cherry juice with the cornstarch, sugar and cinnamon until smooth. As soon as the cherry juice boils in the pan, stir in the mixture and bring the whole thing to the boil once, stirring constantly. Then add the cherries, remove the mixture from the heat and allow to cool.
