Try our recipe for a flavourful Thai Red Curry!! 🌶

INGREDIENTS:
SERVES 4

1 tbsp vegetable oil
1 onion, diced
6 cloves garlic
2 lbs sirloin steak, sliced into thin strips
4 tbsp thai red curry paste
1 tin of coconut milk
1/2 lemongrass stalk, white part only, finely chopped
1-2 tbsp fish sauce to taste
2 tbsp fresh ginger, peeled and grated
1 tsp honey
300 g green beans
Steamed jasmine/basmati rice to serve

METHOD:
Heat the oil in a large sauce pan. Add the beef and cook for 2 to 3 minutes stirring until just browned. Set beef aside. In the same pan, add diced onions, garlic & curry paste and continue cooking for 1 to 2 minutes stirring . Add the coconut milk, lemongrass, 1 tbsp of the fish sauce, ginger and honey. Stir well, reduce the heat and simmer gently for 15 minutes. Add your beef back to the sauce. Taste and add the remaining fish sauce if necessary. Continue simmering uncovered for about 5-7 minutes more and add the green beans. Simmer gently for about 5 minutes until the beans are just tender. Serve immediately with plenty of soft rice.

Try our recipe for a delicious twist on SWEET POTATOES!

INGREDIENTS:
SERVES 8

For the Potatoes:
3 lbs sweet potatoes
3 tbsp. olive oil
2 garlic cloves, finely chopped
1 sprig rosemary, finely chopped
3 tsp. salt

For the Roasted Garlic & Yogurt Dip:
2 garlic bulbs, separated into cloves
1 tbsp. olive oil
2 tsp. salt
5 tbsp. honey yogurt
4 tbsp. mayonnaise
1 lime, juiced & zested
Salt & paprika to taste

METHOD:
•First make the roasted garlic dip. Preheat the oven to 400°F or 200°C. Place the garlic cloves in an oven proof dish then pour the olive oil and toss to coat. Spread out in a single layer and roast in the preheated oven for 25 minutes or until tender. Remove from the oven and let stand until cool enough to handle.

•Peel the garlic cloves then place on a heavy cutting board and sprinkle with a little salt. Mash well with a fork until smooth. Scrape into a bowl and stir in the lime juice, lime zest, honey yogurt and mayonnaise. Season to taste with salt and paprika. Cover the bowl with plastic wrap and chill until ready to serve.

•To cook the potatoes carefully wash & cut each potato into rounds and place in a large bowl. Add the olive oil, garlic, rosemary and salt. Transfer the rounds to a roasting pan then cook in the preheated oven for 1 to 1 1/2 hours or until crisp and golden. Preheat your griddle and finish your potatoes on the grill until nicely charred. Transfer to serving bowls & serve immediately with the roasted garlic and honey dip. Enjoy!
