Southern-Style Baked Banana Pudding 🍌🍰

Ingredients:

• 1/2 cup of sugar
• 2 tablespoons cornstarch
• 1 teaspoon salt
• 2 1/4 cups of whole milk
• 4 large eggs, yolks and whites separated
• 2 tablespoons unsalted butter
• 1 teaspoon vanilla extract
• 3 1/3 cups of vanilla wafers
• 4 ripe bananas, sliced into 1/2-inch pieces
• 3 tablespoons sugar for meringue

Directions:

1• Heat your oven to 375°F. In a small mixing bowl, combine the sugar, cornstarch, and salt thoroughly. In a medium, heavy-bottomed pot, mix the sugar blend, milk, and egg yolks until fully combined. Place over a medium flame and continuously stir for 6 to 8 minutes, or until the mixture has thickened. Remove from the heat, then mix in the butter and vanilla extract.

2• In an 8-inch square baking dish, arrange a layer using half of the vanilla wafers. Add a layer of half the banana slices over the wafers, then pour over half of the pudding mixture. Repeat with the remaining wafers, bananas, and pudding.

3• Using an electric mixer at high speed, whip the egg whites until they start to foam. While continuing to beat, gradually incorporate the 3 tablespoons of sugar, continue whipping until the sugar is fully dissolved and the mixture forms stiff peaks, around 5 minutes. Carefully spread the meringue over the pudding, making sure to reach the edges of the dish.

4• Bake in the preheated oven for 7 to 9 minutes, or until the meringue is golden brown. Allow the pudding to cool for 30 minutes for a warm serving or chill it for an additional hour if you prefer it cold.
