Yo! Putting the word out! I want to expand hours. I need someone that can run the front of the house with us. Someone to answer phones, coordinate take-out and delivery orders, pitch-in with keeping customers happy and eating in clean spaces, listening to great music. Need someone not afraid to get dirty, that likes to work hard. Need employees that can work lunch and/or dinner any and all days of the week. For those new to Shrimp vs Chef, this picture has been on the shrimptruck for YEARS! I take it down for most private events 😂

There are around 200 different types of French Fries in the food business. A majority of them come frozen with a list of preservatives that keep them edible for long periods. The only ingredient a French Fry should have before it hits the oil is potato. When I’ve had fries in the past I typically freshly French-cut and twice fry Idaho Russet potatoes. This is super laborious. Russet potatoes are dense AF! Not the easiest thing to cut on a daily basis. I’ll admit I started using a mandolin. Anyway, this also creates a need for a lot of refrigeration space to keep the potatoes fresh and safe before each order. So, when someone were to ask for French Fries at the shrimptruck, it’s really an impractical item to carry. Space is limited. I can’t charge much for an order of fries anyway. As popular as fries are, too, it becomes even more of a project to keep up with the orders due to space in the deep fryer. It’s a mess in a mobile kitchen. Ask any In n Out employee.

Now I have a restaurant and now the rules change a bit. Sorry to disappoint Negan and Lucille, but tomorrow I’ll have Shrimp & Fries at the shop! Cajun Fried Shrimp and Freshly French-Cut Fries, served with Tapatio Aioli; ketchup on hand for those old schoolers. Limited supplies!

This was me and my friends when I was a teen. We did this at 7-11. We drank Slurpees, ate microwavable burritos, Hot Tamales and played coin operated video games on weekends or after baseball practice. It was our hangout. Our social network’s nucleus. We rode our BMX bikes, skateboards or walked over. We talked about baseball, girls, music, school, nonsense.. It was safe and our parents knew where we were. Now it’s a lost pastime. Now I’m doing what I can to bringing it back. Parents, I’m one of you. Know that when your kids plan a trip without you to Shrimp vs Chef they are safe. You can call the shop to check on them if you’d like. I plan on making a special after-school menu specifically for our local middle and high schoolers. I love this community. This is me paying it back for as long as you let me.

Howdy! …to those that don’t know, the restaurant is open! We’ve had people call, message, walk-in and say they didn’t realize we were fully open. We are! Spread the word! Perhaps consider this a “Grand Opening” announcement! (The PARTY to celebrate the opening will be announced soon🎃). We’re still finalizing a few to-dos, but Shrimp vs Chef is open for business!
