Roast Chicken Leg Quarter
Red Beans and Rice with Smoke Sausage

All of these items can be made for catering and may make future appearances on the truck for lunches.

Who loves a good cup of coffee? I do and am thankful for the ability to sip mine while others are working on this busy shopping day.

Stay safe out there if you have to go get those sales. Be mindful of how much work and stress is put upon the store employees and staff at food establishments. Give them grace and treat them well.

Friday is going to be a cleaning and restocking day after a busy week... But Saturday, come find us at the Historic Sam Houston Schoolhouse for their Christmas Bazar and Open House.

It's a busy day preparing for meal services. Chicken and potatoes for and tomorrow are being cooked. We also started thawing turkey and hams we are cooking for next week.

To all our friends in the Town of Louisville, tonight is our last Food Truck Tuesday for this year. We will be setup at town hall from 5pm to 7pm for dinner. Stop on our for a Cheesesteak, Angus Cheeseburger or Pulled Pork sandwich. We will have great side items with us as well.

A proper flag retirement ceremony at Fort Dickerson this afternoon.

I have seen many ceremonies before but never where they cut each flag stripe to be disposed of one at a time.

It is a learning lesson for all those here from child to adult.

You have a chance to learn about history and the civil war right here in our area this weekend. Come on out to Fort Dickerson Park in Knoxville for a living history day and battle reenactment.

From 10am to 4pm you will have an opportunity to talk people about the rich history of the fort and how it was used during the civil war.

We will be onsite serving food, drinks and treats. We would love to see you.

I am always thinking about new items to serve. We recently added added cheese steaks to the rotation. I have been looking at other ideas. What do you all think about the chopped cheese sandwiches from New York City bodegas or the chicken ranch cream cheese mix called Crack Chicken for a sandwich.

We want your input, it's helps us know what direction to go.
