Further research and development using Angry Erik Brewing’s Amber Ale for our collaboration later this month for their anniversary! Here’s how it went:
1: Overnight dry brine using salt, pepper and harissa
2: Sear all sides of the meat 🥩
3: Add the onions, carrots, garlic, thyme, bay leaves
4: Add enough beer to cover the meat and bring to boil
5: Lower heat and simmer for 3-4 hours until meat is tender
6: Enjoy 🍻

One of my favorite aspects of what I do is having the privilege and freedom to experiment and collaborate with local businesses. We’ve been asked to participate in Angry Erik Brewing’s anniversary event next month and I thought it would be a great time to create a dough/topping combination, highlighting one of their craft beers! Here I’m a making a high hydration dough, with a percentage of local whole wheat from River Valley Community Grains and using AE’s beer in place of water, resulting in not only great flavors but a beautiful amber color you can’t get from just water. Stay tuned 🍕 🍻
