Tonight was a private party, "colab" between Josh and Chris - Roots Southern BBQ and The Ruskin Seafood Company, Inc. . We want to start more of these "exclusive" type dining experiences in 2025.

On the menu tonight was-

Stone Crab Claws

Seared Ahi Tuna

Scallops & Micro Citrus Green Salad with Truffle Oil & Balsamic

Sliced Filet Mignon topped with Tiny Carrots and Herb Flowers

Grilled Asparagus

Mashed Potatoes with Peppercorn Sauce

Grilled Shrimp over Herb Valoute drizzled with Truffle Oil

Not too shabby ...... In fact, it was delicious!

A special "Thank You" to Kevin Chadwick for letting us use your truck to pull the Roots trailer tonight! You are a lifesaver!

GOOD NEWS...... our truck will be fixed next week so we can hook up the food trailer and get back to serving you guys very soon! In the mean time, don't forget we do catering and holiday meals as well- our trailer is fully operational right now!
Most of you are aware that Josh is great at BBQ but he can cook just about ANYTHING so when you are planning your Christmas work party, your family parties or any gathering where food is involved- reach out! He can do fine dining all the way down to good ole country cookin so reach out if you want to impress your peeps with a private party!
We will announce our next public event as soon as we have a confirmed pickup date for our truck.

****Update!! We are so sorry to cancel tomorrow but, Josh's truck decided it doesn't want to cooperate. We are trying to figure out what is wrong and will get it fixed ASAP but as heavy as the trailer is, there's no way we can pull it right now.
We are hopeful to be able to get out a few days after Thanksgiving ....we will definitely keep you all posted! We were really looking forward to seeing everyone!

THIS is exactly what Roots is all about. This morning we are up and getting ready for second day of the Ruskin Seafood Festival . We have Catfish a Stew on our menu. In my memories, these pictures came up. Many years ago my girls and I took a trip up to see daddy (their grandaddy) and he was making catfish stew for everyone. These memories are priceless as we lost my dad in 2018.
These two are 17 and 20 now...maybe I can get them to pose w their stew today 🩷
Roots is all about creating memories around food and being together with family! Great way to start the day!

We will be there!!! Come get some good ol' Catfish Stew, Onion sausage, Seared Ahi Tuna, Baby Back Ribs and pulled pork from us! 🔥🔥🔥

Things to know if you are attending our festival this weekend....
#1 The Greater SouthShore Chamber of Commerce decided to waive the $10 entry fee this year (in light of the hurricanes -the headaches and heartbreak so many of our residents and businesses have endured) so come one, come all!

#2 Hillsborough County still charges their $2 per carload, entry fee to the park. Please be prepared to pay that to the rangers upon entering the park.

#3 We do serve BEER & WINE to those over 21 years of age. Please bring your ID if you plan on enjoying some adult beverages

#4 There will be TONS of food, TONS of drinks and tons of things to do! Come have a great time! For the first time ever, we will have a car show going all day as well- both Saturday and Sunday. Modern, Euro Saturday and Roamin Oldies on Sunday!

#5 SEABUCKS are our form of currency when it comes to food and beverage purchases in the festival. It's a simple process- you find a Seabucks tent (there will be 3 in the event and we accept cash or credit card for these)-it's an exchange of CASH for SEABUCKS $1 equals 1 Seabuck. This is the ONLY form of money the food vendors will accept. Please plan accordingly. The festival has operated this way for 33 years- some think it's a pain others don't mind it but it is what it is.... so come prepared :)

#6 Any vendor that is NOT food/beverage such as arts/crafts/facepainting etc- will deal directly with cash or credit card.

#7 Kids wristbands can be purchased at any Seabucks tent. They will be $5 and will be good for unlimited inflatable slide turns & obstacle course, one turn on the reverse bungee and a rock climb on the wall. We also will have the Firehouse Cultural Center's hands on Art/Creativity Tent (at no cost). Kids R Kids will also have an area with games for the little ones (at no cost).

#8 We have TWO stages this year- we have a family/kids stage in the back of the festival - filled with an action packed lineup of local talent acts- both days. Our other stage is the MAIN stage which is our Bobby Howard Memorial Stage and is located in the food court area. This is where our live music will be both days.

Come on out and SEA us this weekend. We have a team that has been working very hard to make this festival great. Our sponsors and committee members should be commended for all of their efforts- lots of heart, sweat and tears go into something like this so...please be nice , be kind and enjoy yourself!

Saturday night (Nov 9) we will be at the final Concerts for a Cause series in Waterset. We open at 5pm and the concert starts at 6pm. Bring a chair or blanket for the lawn and enjoy their live music. Bring food donation for Feeding Tampa Bay Truck (as your entry).
Come see us!!! We will have Baby Back Ribs, Pulled Pork, Beef Smoked Sausage and YES, we will be cooking some more Pork Belly Burnt Ends!

Come see us NEXT weekend, November 16 & 17 at the Ruskin Seafood Festival! Here are a few pics of our booth last year at this awesome event. Although our "booth" space will look a little different (a lot different), our delicious food options will remain! We will be cooking up some South Carolina Catfish Stew, Onion Sausage, Baby Back Ribs, Pulled Pork, and of course our yummy sides! Be sure to come see us!!!
The chamber is waiving the $10 entry fee this year, in light of the recent hurricanes. They want you to come on out and just enjoy yourself in our community! The weather looks like it will be absolutely beautiful next weekend with a high of 81 and low of 60 degrees!

Look closely....these pigs were NOT harmed during this farm visit. I explained to them that although Josh was sweet , they should keep their distance....not to mention, I'm certain they saw the Roots trailer pull in and they probably could smell the aroma from the grill 🐷🐖🐽🐗 I'm happy to report you will NOT see them on our menu this week!

Even farm animals need some clean up help after the storms!
Today was a great day feeding friends( humans) of Maggie's Farm as they helped try and get the place back to pre Milton condition.
It was a beautiful day on the farm with both the animals and the humans 🐾😎

Here we are...all set up and ready to go til 9pm tonight (Saturday).
