This past weekend I had the pleasure of cooking a wedding feast for one of the nicest couples I’ve ever met, to celebrate their big day. Congratulations!

Menu
- white bean and crispy prosciutto crostini with fresh figs and basil
- caramelized onion and smoked salmon tarts with parsley cream and capers
- Parmesan polenta toasts with wild mushrooms and Gorgonzola (not pictured)
- whipped ricotta salad with greens, roasted tomatoes, corn, pumpkin seeds, and shaved Parmesan
- crab cakes with old bay aioli
- beef tenderloin roast with three onion steak sauce
- black pepper and garlic asparagus
- roasted sweet potatoes with miso tahini butter

The overlooked radish. One of the first things out of your garden and often forgotten about. But there are so many great ways to use them!

Here I pickled them and served them with miso marinated scallops that were seared in bacon fat and ponzu charred bok choy.

So proud of our budding artist! Only 22 kids from her school had a piece selected for the areas spring art show and she was one of them. I’m sure this will be the first of many art shows for this creative little kid!

Had the privilege of cooking some beautiful wild duck this past weekend for a birthday celebration. The duck was delicious if I do say so myself! I appreciate the beautiful protein the client provided.

- Deconstructed cream of crab soup with old bay beer bread
- Sous vide wild duck breast with blackberry red wine sauce, wild mushroom risotto, and charred broccolini
- Carmel apple bread pudding with bourbon caramel sauce
