Seafood Bisque the Damo way:
It's a busy cream soup with no cream.
1lb Bay scallops
1lb Shrimp shell on
1lb White fish
1/2 C chopped La Panchetta
1lb potatoes cubed
1 C chopped zucchini
5 carrots chopped
3 vidallia onion 2 minced 1 cut in half
1 Jalapeño
10 garlic whole
10 bay leaves
Tarragon dry 2 TBSP
1/2 lb butter
1 qt shrimp stock ( hold onto your britches I'll tell you what to do come down)
1 qt chicken stock
1.5 cup of regular old whole milk
3TBSP sifted flour
A can of Budweiser beer and a half a bottle of cheap dry white wine if you got the money grab some Sherry
stock: pull shells off all your shrimp, cut onion in half, half a jalapeno with seeds all garlic whole all bay leaves salt and pepper in a pot with lid. Fill water and all the booze 2 inches over schtuff. Bring to boil, lower ti simmer for 8 hours until condensed to about two inches to bottom of the pot. Drain schtuff through colander catching all the juice add back to the pot and allow it to continue draining for any little bit of that crazy great condensed phishness.
Add water to pot to bring it to about a quart and a half. Bring up to boil then low to simmer for about 30 minutes. allow to cool completely then cover with lid. NOTE: buy a candle or some nag champa from Steve mandeville's TheComfortZone
Day two: hey nobody said anything that tastes super really awesome and great was going to be able to be made in 30 minutes.
Diced potatoes and place in scalding hot water in a pot and cover with lid.
Mince onions and saute in butter. Remove to bowl or dish slowly pour milk that is ice cold over 3 tablespoons of flour to create a roux.
Drain potatoes into a colander and cold water wash the potatoes.
Repeat the process three times. Then lay the potatoes on a large cookie sheet line with paper towels and dab potatoes as dry as possible.
Reheat the pot and add the potatoes to saute gently in the butter and slowly incorporate your biochin good phishness stock. Slowly add your room whisking a
