Surf & Surf: Lobster ravioli in a marsala creme sauce with mushrooms reduced in duck fat rendered from confit, 14 hour smoked brisket bits, topped with hand made Maryland style crab cakes, truffled goat cheese sauce, pecorino, chives and balsamic reduction. FULL SEND!

Mighty duck wings:
Smoked for several hours then sous vide confit style for 24 hours. Fried up in duck fat and tossed in a diy gochujang style wing sauce. Side of g*i lan.
