Hard to believe that moments like these aren't too far from now! We're kicking our hunting season off in New Mexico at antelope camp and then will be hauling it back to South Texas for opening day of dove season in September!

Them: "Texas BBQ only uses Post Oak."
Us: "Stand back, we're about to light up some Mesquite."

There's no doubt that Post Oak is one of the most used woods for bbq in the Lone Star State, and for good reason. It burns well and has a great taste on a variety of meats and veggies. However, it's far from the only wood used in Texas.

As you make your way South where the Oaks start to dwindle, the Mesquites begin to dominate the landscape. Covered with thorns, these trees offer a super hard wood inside, which is incredible for live-fire cooking. We absolutely love burning Mesquite for not only the hot coals that last forever, but also for the amazing aroma that it produces when lit.

These aren't your average steak and cheese bites, and we're ok with that. Mesquite grilled picanha and burrata crostini.
