We just returned from our first hop selection! We were hosted by our friends at Yakima Chief Hops in Washington to select the Citra, Mosaic, Simcoe, and El Dorado weโll use in our beer over the next year. It was an eye-opening experience seeing how different lots of Citra, for instance, grown at different farms had profound differences in aroma. We feel we found lots that will bring our beers to a higher level. Why did we select hops? Well, as the beer market has gone through heavy adaptations since the pandemic, we find ourselves making more IPA and other hoppy styles than ever before. If weโre still seeking to make some of the best examples of beer styles that we can, which we are, we feel itโs crucial to take this next step forward. What was also cool was the close connection with terroir we experienced smelling fresh hops at their source. Despite differences in how weโve expressed terroir in the past, the philosophical kinship was palpable. We like to post about the things we get excited about, and this is certainly one of them. Our friends at Barton Springs Mill down Fitzhugh Road from Jester King just received Texas-grown Bloody Butcher corn! The corn was grown in New Braunfels, TX by Kameron Koepp and was just harvested. Bloody Butcher is a deep red-colored dent corn developed in Virginia in 1845. We first heard about it from our friends at Fonta Flora in North Carolina. Barton Springs Mill describes its flavor profile as "earthy notes infused with classic corn flavor."
Today, we mashed in Bloody Butcher corn from Barton Springs Mill along with some pilsner malt to make a Bloody Butcher corn lager. We like the clean, simplicity of pale lager to show off the flavor and aroma of the corn. We get excited about these things because working with a new ingredient that supports local agriculture and shows off the character of our Texas terroir is a big piece of why we got into brewing in the first place.
Look for our Bloody Butcher corn lager in about eight weeks!

Bug Farm is back for 2024! Working with seasonal fruit is one of our favorite things to do, and fermenting summer watermelon in beer is delicious.
Bug Farm is farmhouse ale made with rosemary, lavender, and spearmint and refermented with watermelon.
We processed about a ton of watermelon by hand over the course of two days at Jester King. We diced the watermelon, pureed it, then added it straight to the tank for re-fermentation. The rosemary, lavender, and spearmint were all added cold side as well.
Bug Farm has roots at Jester King going back over a decade. It continues to be one of the favorite beers we make. Available at Jester King now (open seven days a week) and self-distributed around Austin starting today!
