When you cannot roast a whole pig…..there’s we call a lechon kawali which means deep fried in a frying pan. But for this recipe I boiled for 30 minutes,let it cool then rub with vinegar and coat with salt.Tent it with foil and refrigerate over night. You can also do it for 4 hours if you want. Then scrape all the salt and roast in the oven 350 for one hour and thirty minutes or till it gets golden brown like this, crispy and juicy lechon kawali.🍻Happy holidays
