I may not go that far, but I do give it a top 5 in Wedding Main Course Meats.

Pour some hot oil over the skin to make it nice and crunchy and add some Aji Verde Sauce and you have a winner.

Nothing beats the sear of hot embers. These carrots get a good sear on the Plancha, then topped with whipped ricotta, honey, pistachios, and fresh thyme. No convection ovens, no par cooking, no warmers, cooked onsite with open fire

You don’t have to do a boring 1st Course.
The problem comes when your catering team serves a boring 1st Course.

Customized menus are pretty standard with good catering crews. If you are forced to pick between the Diamond Package and the Platinum Package, it may time to find a different catering team.

20 staff onsite clear up on Saranac Lake cooking everything from scratch in the middle of someone’s backyard.

So proud of this team of killers.
They did every single thing that asked from the planners with a smile on their face.

This game is not for everyone and when the crew was called to rise, they answered the bell.
