One of my absolute favorites to make as a chef.
Butternut Squash Gnocchi.

A hard sear in the pan and finished in the style of cacio e pepe with Parmesan and pasta water.

Toss the squash is olive oil and pepper and roast in our wood oven and then make the dough.

A legendary first course or a super fun side dish for any event.
