In celebration of "El Dia de los Mu***os", Casa Núñez would like to share their recipe for our Chili:
Ingredients:
1 London Broil steak, cut in cubes
1 pound ground beef
½ pound ground pork
3 Spanish chorizos, chopped
1 green pepper, chopped
1 onion, chopped
4 garlic gloves, minced
2 tablespoons capers
2 tomatoes
1 can tomato sauce
Adobo
1 cup Mojo
¼ teaspoon ground cumin
1 tablespoon chili powder
1 tablespoon fresh parsley, chopped
1 tablespoon fresh cilantro, chopped
½ tablespoon dry oregano
1 cup olive oil
1 cup white vinegar
2 Sazón packets
1 can beer (we prefer Corona)
Directions:
Marinate steak in olive oil, Adobo, and Mojo overnight.
Heat the caldero over medium-high heat and add the olive oil. Sauté the peppers, onions, and garlic until translucent, about 3 minutes. Increase the heat and add the steak. Brown the steak and then add the ground beef, stirring occasionally to pick up browned bits from the bottom of the pan as the moisture evaporates, about 15 minutes. If the beef is excessively fatty (your judgment call), spoon off some of the fat, but leave some for flavor. Add the ground pork and chorizo, stirring until fully cooked.
Add the vinegar, cumin, chili powder, parsley, oregano, and Sazón, and cook for 30 seconds. Stir to combine well.
Add the tomatoes, tomato sauces, capers, and beer, and simmer for 45 minutes. Add water (or another beer) if needed for desired consistency. Serve with preferred condiments such as chopped Jalapeños, shredded cheese or avocado. Enjoy it!
