Even when not open on days off, we go to work to bring you the best food and drink that we can offer. This brisket went into the smoker last night at 7 and I took it out at 9:30 this morning. Those little pats that look like pats of butter are actually pats of beef fat rendered down from the trimmings of the previous brisket and chilled. Sprayed with apple cider vinegar and cooking in a wee bit of beef fat, this brisket is now wrapped in foil and in the oven to finish it off to a savory melt-in-your-mouth piece of smoked brisket. 17 to 18 hours of TLC is what it takes to do it right. When done, I’ll let it rest for over an hour and then wrap it tight in plastic wrap and cool over night. This process allows all of the flavorful juices to pull back into the meat from the edges, making the meat as moist and tender as possible. Tomorrow this will be ready for you with Jane in the kitchen. If you haven’t had our brisket with Alabama White Sauce, you’re missing out on a culinary gem.

Come on down tomorrow night and let Jane make up a plate just for you and Chase can pour you a great craft beer to go with your meal. DJ Jazzy Jeff Livingston will be spinning vinyl records from 5 to 8.

We WILL NOT HAVE THE MIKE TYSON POST-FIGHT INTERVIEW ON THE TVs today but we WILL HAVE THE PACKERS AND BEARS AT NOON.

It’s a bit cheeky but just had to say it…anybody can post a picture of the Packers and Bears logo, BUTT we like to think CheezHEAD Brewing is a bit different.

We’ll not open today. Tom has been sick for seven days and one of our cooks got a bit sick and our closing bartender is now sick. Even a good bit of Brandy at favorite supper club ’s hasn’t helped Tom shake this. Tom can cover bar and kitchen solo for a couple hours, but not all day even at 100%. Open tomorrow before 11:30 and ready to serve you for the Packer game and full menu until 6 with apps and soups after that.

GOOD NEWS THOUGH…WE’VE HIRED A 3rd COOK! EMMA OWNS HER OWN FOOD TRUCK AND IS SLOWING DOWN FOR THE SEASON. JANE AND I WORKED WITH HER FOR A COUPLE DAYS THIS OAST WEEK ANS SHE’LL BE ON BOARD NEXT WEEK. JANE WILL BE IN THE KITCHEN TUESGAY AND WE’LL HAVE A FULL MENU!
