Alright my friends! I am back in action for the winter Pierogi games!
Here's the deal!
All orders are due by December 12th for distribution between December 20th-23rd.
All pierogis are delivered fresh and never frozen. Confirmation of your order will be sent once you have completed the google form and you will hear from me by December 18th with pickup details. Please reach out via email to [email protected] for any questions!

Sorry for the wait, my friends!
The Chile Rellenos Valentine order form is ready!
I have two options available:

$65 (vegetarian)Two orders each of 2 Chile Rellenos stuffed with cheese, a side of rice, a side of beans, and a mini-cheesecake with dulce de leche sauce

$65 (vegan) Two orders each of 2 Chile Rellenos filled with roasted corn and rice, a side of rice, a side of beans, and a vegan mini-cheesecake with raspberry sauce

Pickup times are at Arnolds Block in Bethel:
February 12th between at 2pm
February 13th between 5pm to 7pm
February 14th between 5pm to 7pm

Babes Bar right next door is running a mezcal margarita special, as well as supplying Tecate and Pacifico for anyone interested in grabbing a drink with their dinner for Valentines Day.

As most of you know my mother is from Mexico and growing up in a Mexican household allowed me to try all kinds of food as a kid. Chile Rellenos pronounced (chee-lay ray-yen-oh’s) is a staple dish to Mexican cuisine that brings me great memories. I can picture my mom smoking the poblanos over the open flame on our oven and the smell of the peppers coming up through the floorboards and into my room.
Originating in Puebla in 1858, it’s described as a smoked green poblano pepper stuffed with cheese, meat, rice, or vegetables and coated with an egg white batter and deep fried until golden brown, then submerged in a rich tomato sauce.
I’m will be adding this take-and-bake item to the menu next month for a Valentines Day couples package paired with cocktails courtesy of my neighbors here in Bethel
Be on the lookout for many more creative and bright items like this that encompass the fun colorful side of The Chameleon Catering Co. and exhibit pieces of my families culture and history.
The Valentines Day Order form will be live January 16th and these bad boys will be listed on there so please keep your eyes open for the announcement. I’ll only be make 20 orders for the holiday to ensure a smooth and easy pickup.

Lasagna perhaps? 🍅
I wanted to add a larger item to the take and bake night and figured lasagna would be a great way to use up my extra beef! These bad boys come in a 9in by 13in aluminum pan and can feed 6-8 people, they only require reheating.
Beef bolognese sauce, ricotta, lots of parsley and lots of basil, very low sodium and love 💕
Side of bolognese sauce included to prevent the pasta from drying when reheating.

It’s finally happening!
My first public event is Sunday, January 29th which will be a Shepherd’s Pie Take and Bake Night. I have a meat-based option, a vegetarian option annnnnnd a vegan option. All items are homemade with love and contain local ingredients by local farmers. All orders must be placed ahead of time via this google form https://forms.gle/wr7gtNpwo4XGSDkX9 by January 20th at 9 pm. I have room for about 24 more orders so please let me know as soon as you can. If you have any questions please feel free to message me at or via email [email protected]

Each pie comes in an 8in x 8in aluminum foil pan for easy re-heat.

$35 - meat based shepherds pie ingredients: beef, potato, corn, carrots, peas, greens beans, butter, cream, milk, parsley, onions, salt + pepper

$30 - vegetarian based shepherds pie ingredients: potato, corn, carrots, peas, green beans, butter, cream, parsley, onions, salt + pepper

$25 - vegan based shepherds pie ingredients: potato, corn, peas, carrots, green beans, rutabaga, vegetable stock, parsley, onions, olive oil, salt + pepper

Pickup is either:

Sunday January 29th between 10am and noon at Arnolds Block in Bethel
or
Sunday January 29th between 3pm and 7pm at Arnolds Block in Bethel
