Feels like soup should be on the menu? Maybe a little smoked vegetable/ beef or chili? Homemade bread? (Even people who own food businesses have to learn new things. Herb decorated bread really does take more than one shot. Vegetables and herbs char at different rates… but we’re humble enough to show the practice efforts ☺️.)

With this drab, miserable, cantankerous, frigid, determined Montana winter we’ve entered into, I like to think of my favorite things, which usually include fresh elements such as brussel sprouts, homemade pesto, wild caught Alaskan salmon that are infused with oak smoke.
What can I say? One must live, love, and eat to get through the above described winters. Keep your loved ones close and your fork closer.

We were fortunate to be able to spend the evening with people from our community that literally save lives. They are a remarkable team who are kind a friendly. We appreciate Billings ER and are so grateful for the good time we got to share in and to be in the presence of hard working, selfless folks.

Charcuterie spreads or grazing tables are a wonderful way to give people an amazing variety while filling their bellies. This one featured Caribbean pork belly burnt ends with mango habenero sauce, brisket sliders topped with pickled red onions, smoked wild caught coho salmon pesto crostinis, pesto crostinis, thinly sliced smoked tri-tip, smoked ham, Berbere yam and red pepper salad, Caesar salad, all the cheese, cold cuts, fruits, and veggies and dips with crackers and rolls a person could possibly ask for.
The list of items is endless.

A girl goes through all the effort of cooking on a Santa Maria grill wild caught Alaskan salmon (a must), making homemade papita basil pesto, garnishing with grilled grapefruit, tomatoes, and a chive sprig and delicately arranging it atop thinly sliced perfectly toasted crostini, only to have her husband snag the whole tray and beeline for the camp chair in his stretched out bbq covered tank top while her head was turned.

Take a look at this delectable new catering menu dish. Shaved brusell sprouts cooked in rendered bacon fat, apples, fennel then tossed in a tangy/ sweet dressing. I’ve sprinkled pecans and chopped fennel tops as a garnish. One of the best brussel sprout dishes I have ever made/eaten.
