It's been a HOTTTT minute since we have had the smoke rollin'. We have 4 beautiful pork butts on for an overnight smoke. Staring Temp is 225. Pellets are the champions blend from B&B. These beauties will get wrapped a little after midnight and back on at 250.

Y'ALL!!!!! These ladies were just pulled off a Six hours smoke at a current internal temp of 175. They were dressed in Brown Sugar, Honey, and Butter thrown back on the Smoker to get up to Temp of 205!!

20lb American Wagu Brisket, hand butched from Burn Co!

This bad boy will go on Pitt Boss for 17ish hours @ 225! We will be using a Championship blend of cherry, pecan, and Post Oak. Seasoning will be very traditional with Sea Salt, Ground black pepper, and Garlic powder (aka SPG).

WHATS ON YOUR SMOKER??

OURS?? A Beautiful 15lbs prime Brisket and a juicey pork belly. Bologna will also be going on in the morning. Brisket went on at 3pm @225 Degrees and was just pulled to be wrapped in peach butchers paper, then right back on the smoker till early morning. We pork butt went on at 630pm and will also be pulled early morning.

So much for pictures....... Well this didn't even make it the personal stash.... This beauty was smoked 9 hours (taken off around 4 this morning) This was our oldest son's first stab at it and id have to say it was delicious! He decided to shred it up and this was all that was left! Definitely made a mean pulled pork sandwich with pickles and onions.

We have time for one more order before the end of August, who's it going to be??? Right now we are only smoking, deliver...
