Our Origins Story

How does one go about opening up a restaurant in a little town that doesn’t have a lot to offer? Why, you fall into it head first, of course!

Chef Josh has been in and out of food service for about 25 years. He got his start in Pittsboro, IN at one of the most famous catfish joints in the state, Frank and Mary’s. Dishes, potatoes, bus boy; you know, all of the s**t jobs you have to do to put in your dues and work your way up. Mostly he learned how to duck a potato that came flying at his head. LOL.

After that, he bounced between food service and other miscellaneous jobs for a few years. Construction, Temp work, retail, warehouse; but always somehow found his way back into food service. This went on for some time, before finally deciding to try and make a go of it and heading into culinary school at The Chef’s Academy in Indianapolis.

While there, he gained experience in all things yummy. Sushi, pizza, pasta, burgers; you name it, I got to eat it. His externiship was something that very few got to experience. He was accepted into the 5 star resort in South Carolina called Kiawa Island Resort. This was the place where kings and princes, politicians and presidents, and corporate American moguls went to pay outrageous prices for tiny, immaculately plated food.

After culinary school, Baton Rouge was home for 3-4 years. This is where he refined his soul food and southern style of cooking, learned the art of managing a catering business and put out wonderful Sunday brunches weekly. Life, however, does not always play along and we were replanted back here in Greene County.

This time frame was difficult to handle. Even with all of the experience that he had under his belt, finding employment proved to be a feat. Eventually, Alpha Gamma Delta at IU Hired him to be their house chef. This held new challenges, new abilities and opened new doors for him. While working at AGD, he was hired on part-time at Scenic View on Lake Monroe. He made fast friends with the owners and was able to help them refine and refresh their menu to bring in new customers and surprise the current clientele. This gave in the in at The Bakehouse on the Square to take over the catering department and build a name for it.

The Bakehouse gave him freedom with food and demanded responsibility from him simultaneously. This led to him finding his employment home out on Crane Naval Base running the MWR Clubhouse.

This brings us current-ish.

For the past couple of years, there has been a catering business run out of our house. Some times it worked, sometimes it was a struggle, but it always worked out in the end. In April of 2019, we fell into a kitchen to make that struggle less of and issue. While discussing whether or not to actually take over the lease, we were asked if we were going to make it open to the public. This is not something that we had discussed or even thought of. The landlords were pretty intent on having something in there that drew in the town, so we discussed it and decided that we could possibly do that.

It was a rough road to open. Things didn’t go right with planning and time frames. Things didn’t show up or needed to be replaced. Things were in the way and needed to be gotten rid of. It took a few months longer than we wanted it too, but in mid-August, the doors to The Geeky Grub were flung open for the world to judge. LOL

So far so good, we think. Don’t you?
