ALWAYS make sure you sit down with your caterer and have a tasting prior to your special event! This will help you avoid misunderstandings, conflict, and disappointment on the day of your party. Food may be altered, or suggestions may be made if planned in advance with your caterer to have an official tasting. Some chefs charge for these meals, and some do not. Check with your caterer to see if a fee will be applied. Don't forget to go in with an open mind and be kind to your caterer as their food is their artistic expression even as a paying client. If they are unable to meet your palette's needs, you might need to go in a different direction by selecting another caterer.
