This has to be one of the coolest Grilled Cheese sandwiches we’ve seen. Chef from has created this with cheddar, mozzarella, and parmesan, along with pickled shallots and chives. We dig the melted cheese crown it’s got too!
New on the menu Grilled Cheese. Cheddar, mozzarella & Parmesan with some pickled shallots and chives in the middle. Pretty happy with how this came out (thanks Maya for doing the actual work) 🧀

Thanks to Barrie E. for the privilege of feeding her and her guests last night. French onion soup, spinach salad with warm bacon honey balsamic vinaigrette dressing, stuffed filet mignon with mushrooms, bacon, spinach, bleu cheese and Guyer, warm roasted vegetables, and roasted rosemary garlic red potatoes. Finished with spiced apple granola and whipped cream shooters.

Our pots and pans are nearly all either All Clad or cast iron. But on the incase we need to add to our collection, the reviews over the course of 4 years, (and being on a far tighter budget than we used to have) we will strongly consider the Tramontina brand (triply).

This may seem to be a counterproductive post since we really want to cook for y'all. But if your looking for a cookbook, we really like Michael Symon's 5 in 5 cookbook. He says it's 5 ingredients (main), in 5 minutes. While we do not think the average person can do these in 5 minutes, they are good recipes, economical, and definitely fast and easy!

Sauce Gribiche

Recipe from the Tasting Table Test Kitchen

Yield: About ¾ cup

Prep Time: 20 minutes
Cook Time: 7 minutes
Total Time: 30 minutes

INGREDIENTS

Ice

2 large eggs

1 garlic clove, roughly chopped

1 teaspoon Dijon mustard

1 tablespoon lemon juice

6 cornichons, roughly chopped, plus 1 tablespoon pickle juice from the jar

¼ cup canola or grapeseed oil

3 tablespoons extra-virgin olive oil

1 tablespoon capers, rinsed

2 tablespoons finely chopped flat-leaf parsley

2 tablespoons finely chopped chives

2 tablespoons finely chopped tarragon

¾ teaspoon kosher salt

⅛ teaspoon freshly ground black pepper

DIRECTIONS

1. Fill a small bowl with ice and water and set aside. Bring a small saucepan filled with water to a boil over high heat. Reduce the heat to medium and use a slotted spoon to slowly lower the eggs, one at a time, into the water. Simmer for 7 minutes, turn off the heat, and use the slotted spoon to transfer the cooked eggs to the ice water. Once the eggs are cool enough to handle, gently roll them on a counter to crack the shell, then peel it away (be careful, as the egg yolks are still semisoft in the center). Place the eggs in the bowl of a food processor.

2. To the food processor bowl, add the garlic, mustard, lemon juice and pickle juice and pulse 3 times, just enough to break up the eggs slightly. Into a liquid measuring cup, add the canola and olive oils, then add the oils to the food processor in a slow and steady stream while pulsing the egg mixture until the sauce is thick and chunky, about 15 to 20 pulses. Add the cornichons and capers, then pulse a couple of times to combine. Transfer the mixture to a medium bowl and stir in the parsley, chives, tarragon, salt and pepper. Serve with simple cooked vegetables, like blanched green beans, steamed asparagus and boiled potatoes.

Comfort food in the summer....by all means.... try a grilled cheese sandwich. Quick, easy, and versatile. This is a grilled cheese sandwich with brats (we know, you shouldn't let the juices waste and heaven forbid slice them before cooking, but aren't rules made to be broken? ;) ) parm, mozz, and the super melty american cheeses. We also added a substantial amount of fresh basil leaves to hide the saltiness of the cheeses. In the pic there is a demonstration of 2 choices of "crustiness" which can be done as "dark" or "Lite" as you like.

These are the best hands down!!! I need another as we lost the battery cover off of ours some time back.

One of our winter recommendations is a Chicken Ballotine. ant the method I have used for the past 16 years (+-) is from this video. If you follow it as Jacques does it it turns out perfect every time. Another tip is to use a ziplock baggie over your remote to pause the video to "catch up" with Jacques. Grilling this weekend? A simple and elegant way to enhance your meal is to use compound butter. Add your favorite herb or herb mixture to softened butter, mold it to the shape you want (most simply roll in into a log) and let it harden again. After your take your meat or veggies of he grill put a slice of butter on it while it is resting. Yummers!!!! One of our faves is chipotle butter.
