I’ve been quite here for a while. Building a new store, an extension of my creativity and a space to dream while having the chance to directly engage with customers daily is an all encompassing job.

I am pretty good at keeping secrets. However I’m not good at having to tell little lies, but when the Food Network] asked me to compete on season 4 of I knew I couldn’t miss the chance at parking lot cooking fun.

To our team, we wouldn’t be here without you! We are a small but mighty team who never says no to a client request. Because of you, we can celebrate another mile stone. And while FFF is only 2 years old, we are lead by our founder/chef, Andrea, who has over 17 years of culinary experience behind her. What can be better than fluffy, light pancakes, stacked sky high and drenched in golden maple syrup?

My love affair with pancakes is long-standing. I love the ease of making them, versatility of adding so many different ingredients and taking the pancakes each time in a whole new direction.

By far, the most popular pancakes have been these fluffy, lemon ricotta pancakes I made and her guests. Each time guest raves about them, so naturally they were added to the menu offerings for all clients I work with.

There is something magical about fall days. Sun seems warmer. The air is filled with the smells of leaves burning. Golden colors are everywhere. And somehow squash tastes especially sweet this time of year. I have to confess, I don’t overly cate for pumpkins, but love the assortment of squashes available in abundance. Red kuri and kabocha being my two favorites, along with gnocchi, I thought why not make a vegetarian version of my favorite fall gnocchi dish.

Sweet roasted and caramelized squashes, with spiced yogurt cream, parsley ( still harvesting from the garden) and toasted pine nuts make this a healthy, cozy fall dish. Plated as an entree or even a small plate it’s just simply perfect.

One of the best holiday trends I see a lot of is appetizers in place of sit-down dinners. Have to agree, after a long year of no celebrations, nibbling on little bite sized gems while socializing and celebrating is the best way to enjoy the holidays this year.

I wrote “Nibblish” last year to share my favorite holiday recipes, which are most definitely year round enjoyed at my house.

I can hardly believe, it’s been a year, since we thought about “oh what’s on the holiday table this year?” but boy oh, boy it’s sure is nice to make these and all of our client favorites for the upcoming holiday season.

“Food is the ingredient that binds us together”-Eten Volgensmij

Fall is in the air and I couldn’t be happier. Crisp mornings, warm summer days, changing of leaves and a complete change of ingredients encouraging all that is warm, fuzzy and filled with love.

Flavors of brown sugar, caramel, bourbon highlight the crisp sweetness of these first batch of apples. Warm, flaky puff pastry is the best vessel for these two bites treats.

There isn’t anything better to represent warm summer days like perfectly juicy, flavorful tomatoes. are my favorite ones to use for dishes, their colors are like gems on a plate.

I love everything about tomatoes all year long, but nothing can beat that first bite into a perfectly imperfect large, beautiful tomato, juices and seeds running down my hands and the tomato skin still warm from the kisses of summer sun.

While there are many ways to eat these beauties, I’ve been craving the Caesar tomato salad I made during a recent photoshoot. Tangy, sweet, perfect vessels for fresh herbs, flowers, capers, and salmon. Do I need to say more?

They say opposites attract. Sweet, savory, spicy, bitter, umami, the spectrum of flavors offers endless possibilities to create unique flavor combinations and unexpected experiences.

Whenever I’m asked what’s my specialty as a chef, my mind goes right away to creating memorable, and out of the box flavor combinations, which at first might seem like they won’t make sense, but somehow they create harmony. Like oysters with kiwi remoulade. Salmon and wild blueberries. Or chocolate torte with crispy sage.

What can I say? The decision to eat well and enjoy endless possibilities with our grazing stations is a good commitment to have.

Approaching each possibility to create a perfect bite is just the right amount of flexibility.

I love the flexibility and freedom a well built grazing table offers. Regardless of dietary restrictions, everyone can have options. The best part though, showcasing the abundance of all the locally grown goodies from our Boulder based vendors and farmers!

Soup in the summer? Well, yes! Chilled soups have been a staple in my family kitchen and our clients enjoy them just as much during these hot months.

Chilled soups are a great way to use farm fresh treasures, such as fresh cucumber, cherries, tomatoes.

The trick is to balance flavors and especially textures, like this chilled cucumber soup, I topped with nasturtium leaves, cilantro, Creme fraiche, and poached shrimp.

Summer is definitely in full swing. Which of course means flavorful bites of food, lots of entertaining outside, time spent with friends and family celebrating the return of, well being together.

Summer fruits and veggies easily lend themselves to be made into crostini and salads and the flavor combinations are endless. Oh, the summer possibilities!

Have you ever loved something so much you wish it was around all year long?

That’s how I feel about fruits of any kind. Especially during these warm summer months, the abundance of stone fruits reminds me of long summer days, spent in the yard picking ripe, juicy fruits off our trees.

With peach season in full swing here in CO, I turn to one of my favorite ways to preserve these fruits: pickling. A quick brine, with water, vinegar, herbs, sugar preserves these beauties and offers lasting possibilities all through those winter months we don’t yet need to think about.

Pickled peaches can be used in salads, on appetizers, as a side dish, part of desserts or on a breakfast sandwich, like these caramelized croissants with whipped ricotta, crispy prosciutto and fresh basil. Drizzle with a bit of honey, and you will hit all those flavor buds!

Happy May Day Friends! This is an especially special holiday for me, reminding me of my grandmother who is the biggest reason I cook for a living and have found my happiest place to be in the kitchen.

One of the first desserts I learned from her how to make is a Genoese sponge cake and many, MANY versions of this cake has been made in my career.

Traditions.

I admit there are some I’ve let go since moving here from Europe. Some just make no sense to me, others I let go in the chaos of life and now just seems too silly to pick back up again.

Holiday traditions are sacred however. Easter egg painting has to be on the top of the list right there with Christmas tree decorating.

I recall my mom one year making different “poaching” liquids using fresh fruits: blueberries, raspberries. Taking onion leaves and steeping them for hours over low simmering heat. Cooling the liquids and setting them aside.

Meanwhile carefully selecting herbs and plants from the garden and showing my siblings and I how to press the plants onto each cooked egg; binding them with old stockings ( told ya this is some old world stuff) and submerging them into the cooled colorful liquids.

Waiting for those handful of hours seemed like eternity. Seeing how the colors from the poaching liquids transferred to the eggs and better yet, to see how well the plant image transferred to the eggs were the best present.

This year, as life was forced to follow a much slower pace, I found myself rediscovering old, family traditions while teaching my Oliver to waste nothing and see usefulness and beauty in everything around us.

Potatoes and holidays go hand in hand. Give this recipe a try. Luscious, creamy, tangy, buttery mashed potatoes. See recipe below:

1 lbs small potatoes, scrubbed
3-4 tablespoons unsalted butter, at room temperature
3/4 cup creme fraiche
