Beef and Chicken Enchiladas Recipe:
Ingredients:
1 Β½ ground beef lean or (83% to 90%)
1 Β½ chicken Breast
( 2 medium cans of Ole Elpaso Green enchilada sauce and minced green chilies)
Ground Black pepper
Seasoning salt
Garlic powder
2 Onion diced
Minced garlic
Ortega Taco seasoning
Corn tortilla shells not hard
Vegetable oil or (your choice)
Kraft sharp cheddar cheese and Kraft three cheese blend
2 medium cans of Ole el paso enchilada sauce (Red)
Lettuce
2 Tomatoes
Sour cream daisy or (your liking)
Black olives (sliced)
Picante Salsa
Instructions:
You will need a nonstick 12x7 baking pan, boil pan and a frying pan. Cooking the meat mix in the cut onion and seasonings drain meat when brown add taco seasoning and half a can of enchilada sauce (red) for chicken boil until shredded and seasoning taco seasoning and enchilada sauce
(green and green chilies) Clean frying pan add 2 tablespoons of oil you will have to add oil to fry shells in the frying pan on medium high until shell is a little brown on both sides let shells drain grease off on a paper towel.
Pour a little enchilada sauce in the 12x7 baking pan take shells and fill them with the enchilada meat roll shell and place in baking pan repeat cycle until all shells you cooked are filled rolled and placed in baking pan take enchilada sauce pour over enchiladas add shredded cheeses and olives bake at 375 degrees fahrenheit for 15 minutes or until your liking. Serve with topping lettuce tomatoes and sour cream and Picante Salsa.
