π§βπ³ Pinwheel Roll-Ups (Vegetable Cream Cheese Tortilla Roll-Ups)

These colorful and flavorful roll-ups are perfect for parties, snacks, or light lunches. Creamy and filled with fresh vegetables, theyβre both easy to make and delicious!
Ingredients:
4 large flour tortillas
8 oz (225 g) cream cheese, softened
Β½ cup sour cream
1 cup shredded cheddar cheese
1 teaspoon garlic powder
Β½ teaspoon onion powder
Salt and pepper, to taste
Β½ cup diced red bell pepper
Β½ cup shredded carrots
Β½ cup chopped broccoli (small florets)
ΒΌ cup chopped green onions (optional)
Fresh parsley or cilantro for garnish (optional)
Instructions:
1. Prepare the Cream Cheese Mixture:
In a medium-sized bowl, mix together the softened cream cheese, sour cream, shredded cheddar cheese, garlic powder, onion powder, salt, and pepper. Stir until smooth and well combined.
2. Add the Vegetables:
Fold in the diced red bell pepper, shredded carrots, chopped broccoli, and green onions (if using). Mix everything until evenly combined.
3. Assemble the Roll-Ups:
Lay a tortilla flat on a clean surface. Spread an even layer of the cream cheese and vegetable mixture over the tortilla, leaving a small border around the edges.
Roll up the tortilla tightly, starting from one end and rolling to the other, making sure the filling is well-distributed.
4. Chill and Slice:
Wrap the rolled tortilla in plastic wrap and refrigerate for at least 30 minutes to allow the roll-up to set.
After chilling, remove the plastic wrap and slice the roll-up into 1-inch pinwheels.
5. Serve:
Arrange the pinwheel slices on a serving platter. Garnish with fresh parsley or cilantro if desired. Serve immediately or keep chilled until ready to serve.
Tips:
You can customize the filling by adding different vegetables like cucumbers, spinach, or even deli meats.
Make these ahead of time and store in the fridge for easy party prep!
