We are running a few test batches for funsies with AP & RED FIFE flours , using a sourdough starter !

Happy Thanksgiving!

Today we are grateful for a community that supports small local businesses, an abundance of locally grown food on the table from hard working , amazing people , and the courage to get up every morning and give it our all!

And dogs. We are grateful most for dogs. Our dogs , Triggerfish, Yadi, and Badger! Dogs bring more joy into our lives than we deserve !

Pies , and tarts, and cakes , oh! But what about the trusty Galette? This semi-free form route of baking that dough allows you to NOT be absolutely perfect!

Simply roll out your dough evenly , pile your goodies inside , curl her up any ole’ way it makes sense to you , chill one hour , egg wash, bake!

Pro-Tip : Think outside of the box when thinking filling ! You’ve got all of these great things, odds and ends , bits and pieces from sides , chutneys - use them inside your baked goods!

Here is Chef Em’s Kabocha,Pear,&Apple Galette recipe :

1 pie dough ! I know , I know , you want that recipe too, but the purpose of this post is the filling!

Filling :

::1/2 medium sized Kabocha squash , seeded , sliced thin
:: 1 pink lady apple , sliced thin
:: 1 red pear, sliced thin
:: 2 T AP FLOUR (I used HHF)
:: 1/2 brown sugar
:: 2 T honey
:: 1 T lemon juice , plus zest, always zest!
:: pinch salt
:: 1 t Chinese 5-spice (my go to “allspice”)

Toss everything together , pile it or place it neatly in the center of your rolled out dough , crinkle , squish , fold , remember - free form, your dough however you please , chill for one hour.

Remove from cooler and egg wash , sprinkle with a little sugar , bake at 350, approx 45 min! I baked inside a tart pan just in case things got outta control !

You may not have the sexiest dessert at the party, but boy oh boy they will go for seconds !

**DM for pie dough , I used flour , it’s a great dough - expect recipe potentially after holiday! Ha!

Make that Cranberry sauce the star of the cocktail hour snack show!

We all have mixed feelings about cranberry sauce - some like to open the can , plop that gelatinized cylinder of lord knows what onto grandmas china and call it a day (no shame in that game, nostalgia) and some like their gourmet fancy pants cranberry “chutney” on the table ..we like it all!

Something important to note here , don’t waste your time and effort just to pair this sauce with your dinner ! Make this yummy recipe of Chef Em’s a star next to the meats AND the cheeses !

Recipe : yields 1 qt.

1/2 cup cane sugar
1 “thumb” grated ginger
1 bag fresh cranberries
1 diced apple of choice (Honeycrisp here )
1 diced slightly under ripe pear of choice
1/2 cup fresh squeezed oJ
2 pinches chili flakes (we used jimmy nardellos)
1t sea salt
A few hefty cranks fresh black pepper
Zest of 1 lemon
1 T lemon juice

In a hefty bottom stainless steel pot on medium heat let your sugar slowly caramelize. Once the color of dark honey , add your ginger , juice , cranberries , pears , apples, chili flakes , and cook on a “slow bubble” under everything thickens just slightly (about 20 minutes ) . Add your sea salt and cranks of black pepper , stir and taste. Test for thickness on the back of a spoon, should start to be about as thick as maple syrup - and keep in mind, when it cools it will thicken more !

When you’ve reached consistency , add your lemon juice and zest and stir well. This will give it a lemony zip !

Enjoy at cocktail hour with cheese and crackers , then at the dinner table with tue rest of the meal!

Cooking over fire lends such an amazing flavor to everything on the table !

We absolutely loved the short ribs braised in Poor Farmer Cider over fire in our !

Pro Tip for the Holiday season : to alleviate some of the clutter inside your kitchen , cook a few things over fire or on your grill! Great variance of flavors , a great way to step outside for some fresh air for a moment , and saves a bit of time !

Pro-tip for the Holiday dessert spread : Burnt Fluff on your Pumpkin pie !

This Apple-Butter & Kabocha Custard Pie was so dang delicious ! We made a burnt fluff & 5-spice sugar dust to top it off !

Another pro-tip: Don’t be afraid to step outside of the box when your recipe calls for something you do not have ! Improvise!

If you aren’t eating donuts , order some as fast as humanely possible ! My Lordy ! So, so good!

Not only are these folks so adorable , they have been incredibly supportive of us in our first two years of business - and we cannot wait to have them at our table again this summer at one of our farm dinners !
