SNOW Candy Recipe 🍭 ❄️

100% Pure Maple Syrup
* Craft sticks
* A large pot
* Fresh fallen snow

Preparing the Snow
* Begin by preparing the snow.
* Find a patch of clean, fresh snow that hasn’t been contaminated by people or pets.  
* Prepare the snow by pressing it down until it is firm.  The snow will essentially be acting as a baking sheet.
* You could alternatively fill a shallow pan with fresh snow, pack it firmly, and head inside.  

*You want to make our candy outside because it feels more magical, but we still opted to fill a pan with snow and pack it firmly.  

Preparing the Maple Syrup
* Pour 2 cups of real maple syrup into a pot or sauce pan.
* Place the pot on medium-to high heat and bring the syrup to a boil, stirring often.

* Boil the syrup for 4-5 minutes, stirring constantly.
* Then, remove the syrup from the stove and head outside!
Making the Snow Candy
* Quickly pour the maple syrup onto your fresh, pressed snow before it has time to cool.

* Then, take craft sticks and use them to form the syrup into candy on the sticks.
*
* Roll the maple syrup on the sticks in the snow until the syrup is hard like a lollipop.

Life is rooted in new beginnings. Each chapter and each new year you enter is a new adventure. I find myself growing into fresh new versions of myself along the way. The journeys full of growing pains and bumps in the road. Holding fast to and tight to my every changing dreams and the vision I have for future days. Learning to give myself grace as each new day is different and not always as envisioned. Even the best was once a beginner. Finding the next direction by letting the wind of change carry me forward. More than anything I look forward to all of the beautiful days, moments, adventures and plates to come in 2025 and beyond. Thank you for your continued love and support. Cheers to each and everyone!

Easy Crispy Rice Squares 🌾 🍚 🥢

1 cup Japanese short grain rice
1½ cups filtered water
1 tablespoon seasoned rice vinegar
neutral cooking oil for cooking

Make rice - Place rice in a bowl and use your fingers to agitate the rice. Rinse the rice in the sink until the water runs clear, then drain. Cook rice on the stovetop or in a rice cooker. Fluff the rice with a flat paddle. Make sushi rice - Transfer rice to a large bowl and season with seasoned rice vinegar. Gently fluff and fan the rice, careful to not smash the grains.
Prepare in pan - Line a baking sheet with parchment paper or saran wrap. Then gently transfer the rice to the pan and spread with a wet rice paddle to make an even ½-inch layer. You want the rice to be thick enough to pan fry and hold the heavy tuna. Wrap the rice and refrigerate for at least 2 hours or overnight; alternatively, freeze the rice for 30 minutes so it becomes stiff and easy to cut.
Cut rice - Once the rice is ready, wet a sharp knife and cut into 2-inch rectangles, 12 pieces total. Slide the knife in between slices to keep the rice from sticking to the knife.
Pan fry rice - Add a ½ cup of neutral cooking oil to a medium pan, or enough to make a thin layer in the pan for frying. Heat over medium heat.

Rhubarb, Watermelon Granita with Whipped Cream ☀️

- It’s been a hot hot Summer! Cool off with a refreshing Granita! 🍉

Special Equipment
1 metal pan
1 immersion blender or blender
Ingredients
4 cups rhubarb (chopped- if using cups, chop first, then measure, but I highly recommend using a scale)
1 Tbsp lemon juice (freshly squeezed)
3 cups watermelon juice - chop up fresh, seedless watermelon and place in blender
1 cup sugar
8 oz whipping cream (optional, whipped until thick)
