My lentil journey began in Colombia, where we savored lentils during many meals, but especially on Fridays. I’ll never forget the steaming bowl of tiny, brown, flat seeds as we passed it around the table.
I loved putting them over a bed of fluffy white rice next to the fried sweet plantains.
Here in Bozeman, lentils became the focus of my career as I transitioned from a sales and design career to being a food advocate and private chef.
