My lentil journey began in Colombia, where we savored lentils during many meals, but especially on Fridays. I’ll never forget the steaming bowl of tiny, brown, flat seeds as we passed it around the table.
I loved putting them over a bed of fluffy white rice next to the fried sweet plantains.
Here in Bozeman, lentils became the focus of my career as I transitioned from a sales and design career to being a food advocate and private chef.
I wrote the following article in Distinctively Montana in 2013 after accepting a dare from a foodie friend.

For our Montana-Caribe community dinner , we dig deep in our multiethnic roots and Montana’s soil to design a menu that is unique and a reflection of the Caribbean’s melting pot.
Debating between a spilled with , plantains, and squashes, or an arepa topped with the same topping. What do you think? Check out those lentil fields in Havre, table setting by Colombian artisans, and the beautiful lentils donated by our friends
