My lentil journey began in Colombia, where we savored lentils during many meals, but especially on Fridays. I’ll never forget the steaming bowl of tiny, brown, flat seeds as we passed it around the table.
I loved putting them over a bed of fluffy white rice next to the fried sweet plantains.
Here in Bozeman, lentils became the focus of my career as I transitioned from a sales and design career to being a food advocate and private chef.
I wrote the following article in Distinctively Montana in 2013 after accepting a dare from a foodie friend.

For our Montana-Caribe community dinner , we dig deep in our multiethnic roots and Montana’s soil to design a menu that is unique and a reflection of the Caribbean’s melting pot.
Debating between a spilled with , plantains, and squashes, or an arepa topped with the same topping. What do you think? Check out those lentil fields in Havre, table setting by Colombian artisans, and the beautiful lentils donated by our friends

2024 Lentil Table series is all about Montana-grown pulse crops. Our Dancing Lentils will take you away to a different musical and dance time and location. Our menu will also be inspired by the theme.
July 24th is inspired by the music of the 70’s and 80’s! Rock and Roll and Disco. We invite you to dress up in your rocker or disco threads. Kids too!!

We’re sold out but email me and I’ll add you to the waitlist list as people always cancel. I also need volunteers to help me with decorations and set up, serving and cleanup. this is a community event so I love when the community helps out. This is the reason I do it. Yes, as cliche as it may sound, my love and passion for the ingredients, the farmers and ranchers responsible for growing them, and the process of transforming ingredients into a nourishing meal is why I wake up every morning filled with joy.
