HERE COMES THE LOBSTERMOBILE
With everything on board to cook and serve your meal. We have se

rved on rooftops, yachts, board rooms, marinas, backyards, offices ... parking lots. We arrive about an hour before service, set up our gear, and are ready to serve. We serve buffet style from service tables close to your dining tables. WE DO IT ALL ... ON TIME & WITH PANACHE! We bring everything necessarywith everything required ... and we take our trash with us when we leave. We use Chinet tableware and high-quality disposable cutlery.

“BUT, THERE ARE ONLY 8 OF US!”
No problem, you will be well served by our “Lobsters to Go-Go” division! In that case, we will prepare your meals at our commissary and bring them to the site fully-cooked, ready-to-serve in thermal carriers at the appointed hour. Generally, we restrict the menu to our lobster entrees, rather than steaks, etc. But, who knows, we like a challenge as much as the next guy. RAIN OR SHINE, YOU’LL HAVE A BALL! We prepare all food out of doors, and carry our own tent for service. Many customers elect to rent a tent, table and chairs (we’ll handle the arrangements), to provide for either inclement weather or to provide shade. We can set up our service tables wherever you want, not necessarily proximate to the cooking operation. We prefer to grille them, but steaming is OK, too. Seriously, we also offer hamburgers and hot dogs, primarily for younger guests, which are priced lower, and typically do not include clams and chowder. WHAT DON’T WE DO? We do not provide table service, but our servers bus the tables and manage the flow of courses. We do not provide beverages, although we can provide a bartender, who will dispense your beverages. We require no electricity, although a nearby hose is very handy. WHAT ELSE DO I NEED TO KNOW? We serve year-round, weekdays and weekends. Holiday weekends and Saturday evenings fill up first. The Housatonic Fishing Association, headquartered in Madison, held its annual meeting Saturday in conjunction with the nastiest line squall we have worked in several years. Being fisherfolk , they were accustomed to rain, wind and damp, and are partial to lobster. And the food! We did clams and lobsters, while another caterer did a magnificent job at everything else. Tuttle’s Point Loves Its Lobster
When you want an event that will really draw the nabes, plan on a lobster bake. 60-plus residents turned out for lobster and steak on Mulberry Point. We were afraid the torrrential rain and gale-force winds Saturday might keep them home, but they rallied, boy did they rally! Perhaps they were extra kind because we were soaking wet and shivering, but our cockles were warmed by their approval. For our part, we did serve the best looking 1.75-pound lobster we’d seen all season.

WHAT A DIFFERENCE A DAY MAKES...
On Saturday, 10 of us served 140 lobsters at 3 jobs in the wind and the rain ... with no cellphone service!
24 hours later, warm and dry, 3 of us did a small dinner for 10 ... no wind, no rain, phone service and A/C.
So, do we want to work 14 little jobs or 1 big job?
I have purchased foul-weather gear for the Lobsterettes, guys like getting wet.

ALL LOBSTERS ARE NOT CREATED EQUAL!
Homarus Americanus – known as the “Maine Lobster” – with its distinctive claws, is the only type of lobster you’ll want to consider if it is to be presented whole.
And, because lobsters begin to deteriorate from the moment they are harvested, you’ll want to buy them from a pound or reputable fishmonger. By all means, inquire where they were caught.
Supermarket lobsters suffer from excessive handling, transport and trauma, all of which combine to produce a Your first task, and the one over which you have total control, is to get the best possible lobster going in.
You’ll want hard-shells versus “softies,” if you have the choice. While the meat-to-total-weight is marginally greater with a softie, the flesh is often watery; not unpleasant, but .... watery. You should pay less for the softie if there is a choice.
Always ask for a “heavy quarter” or a “heavy half;” that way, you’ll get the most weight at the lowest rate. A “heavy” quarter can weigh almost as much as a “light” half.
Your lobster should exhibit outrage when plucked from the water: arms raised, claws open, tail lashing. If its claws are hanging, the end is near and it (should be purchased at a lower price), and cooked immediately.
The longer your lobster has been out of its natural environment, and the more it has been handled, the less of its original goodness is available to you.
Which is the reason you will consistently get the best lobsters from the men (and women) who catch them, and God knows they will appreciate your business.
