Tomorrow is the last day (at least for this time, я буду повернути) of my volunteering trip. It was a very different experience than cooking for the refugees in Poland. In Poland, I was very close to the refugees most everyday, but on NATO soil and cooking fresh food. Here I cooked dry rations for soldiers on the front lines of Freedom in the midst of rolling black outs and occasional air raid sirens. Two very different experiences, both extremely profound. Although they do not compete in my heart, and helping the refugees is very extremely important, I now believe the work of the Murachky, the Kyiv Kitchen Ants, is the most expeditious and direct way to help the people of UA. Helping the military win decisively, once and for all, and everyone will be free to go home at last in a Peaceful land. Pagnol's commercial septic design for the commissary kitchen has been pre-approved by our great county's health district!!! It's a major step. Thanks to our awesome designer Frank Marcinko at Allied septic design.

Blackberry Opera: Joconde sponge, raspberry syrup, blackberry whipped Chibouste with a hint of hyssop, raspberry mirror glaze.
Next time, i will add a crunchy pistachio layer at the bottom, and wrap the cake in tempered white chocolate. Otherwise, very happy with the result.

When deboning a whole chicken, always make a stock.
