Spring is in full swing which means the stinging nettles are popping! I set out early yesterday morning and harvested a large batch of nettles. I made a large batch of Vegan Walnut Nettle Pesto- best one I have made so far ;) Then I used the nettle tea - water used to blanch the nettles, to make a Nettle Cordial for Spring & Summer cocktails. Nettle tea is already chock full of vitamins and good for you on its own but I added some fresh ginger, honey and lemons to really give an extra boost. After 24 hours of steeping I will bottle it up to use for mocktails or cocktails this season. But wait, there’s more! I decided to take my nettle experiments even further and made a Vegan Gluten Free Sting Nettle Cake with Blueberry Lavender Compote and Vegan Lemon Buttercream Frosting 🧁 I was skeptical at first but it actually turned out super delicious. It might even be the best vegan gluten free cake I have ever made :) #stingingnettles #nettles #forage #foragedfood #vegan #spring

Working on a fresh batch of pressed flowers earrings :) First you trim all the flowers down. Then you press them. Next, prep you molds/frames. Mix your resin up. Finally got my hands in the dirt and started sowing the first seeds of the season :) Five varieties of tomatoes, 8 varieties of peppers, 6 varieties of basil, tomatillos, Stock and Sweet Peas.
