It’s been so cold and snowy that I had do another stick-to-your-rib special to make it through 🥶 ❄️

- Gołąbki: stuffed cabbage rolls made w/ pork, grass-fed beef, buckwheat, caramelized onion, and served w/ a smoked tomato-vodka cream sauce and puffed buckwheat 😋 (fully GF to boot!)

The only time of year that I honestly crave meat in my pierogi is now. When the wind can chill you to the bone 🥶 duck confit, goat cheese, celery root, marjoram, and orange zest, topped with duck bacon crumble and served w/ a toasted black pepper and pickled cherry jam 🦆🍒

Winter Salad 4.0. Green apple, cured celery root, candied walnuts, vegan gf polonaise, and a buckwheat honey-horseradish vinaigrette. The perfect refreshing contrast to hearty cold weather fare 😋 🍏 🍯

One thing I appreciate about is that they force me outside of my comfort zone with their theme day competitions. Saturday was their “wing off” which, frankly, isn’t something one thinks of when they think of Eastern European cuisine. I tried my best by amplifying familiar flavors using good technique and was super stoked with the results!

- Confited then fried chicken wings glazed with buckwheat honey & horseradish, served w/ a dill relish and spicy mustard smetana dipping sauce

When people ask what’s my favorite dish, I always say “it depends!” Because time and place truly matters. So with the crisp Fall air rolling in, nothing makes me happier than our hot vegan borscht and a hearty kale salad with pickled cherry vinaigrette inspired by my mentor 🍂🍁🔥

Our seasonal Fall squash pierogi are back! Roasted and blended with our house-made farmer’s cheese, porcini mushrooms, caramelized onion, and potato, we’ve added a smoky note with smoked pumpkin vinegar, and are serving them with lovage smetana and toasted Styrian pumpkin seeds coated in buckwheat honey 🍂🍁

Sunday nights are for reflecting. So proud of how far this little truck has grown and nothing like old friends visiting to help you see that progress. It seems like only yesterday me and were working at while studying for wine exams before the pandemic. And now he’s a Master Sommelier and Smetana is almost 3! Looking at our sales, we have an average of 60% returning guests each and every outing. And tomorrow my folks are leaving to visit our relatives abroad for 5 weeks. Nothing could personally be a surer sign of success than them feeling confident enough to fully step away from production. So here’s to everyone new and old for supporting us as we continue to evolve and improve each and every day. Thank you! 🍻🙏🏻❤️
