Always appreciate how as a venue comes up with themes and specials to keep things interesting and get me out of my comfort zone. This time it was “heat week” with the request to do something spicy with a cuisine that doesn’t usually use heat. These fried pickles with spicy smetana relish were a fun and delicious challenge 🌶️

It’s been so cold and snowy that I had do another stick-to-your-rib special to make it through 🥶 ❄️

- Gołąbki: stuffed cabbage rolls made w/ pork, grass-fed beef, buckwheat, caramelized onion, and served w/ a smoked tomato-vodka cream sauce and puffed buckwheat 😋 (fully GF to boot!)

One thing I appreciate about is that they force me outside of my comfort zone with their theme day competitions. Saturday was their “wing off” which, frankly, isn’t something one thinks of when they think of Eastern European cuisine. I tried my best by amplifying familiar flavors using good technique and was super stoked with the results!

Our seasonal Fall squash pierogi are back! Roasted and blended with our house-made farmer’s cheese, porcini mushrooms, caramelized onion, and potato, we’ve added a smoky note with smoked pumpkin vinegar, and are serving them with lovage smetana and toasted Styrian pumpkin seeds coated in buckwheat honey 🍂🍁
