Sunday nights are for reflecting. So proud of how far this little truck has grown and nothing like old friends visiting to help you see that progress. It seems like only yesterday me and were working at while studying for wine exams before the pandemic. And now he’s a Master Sommelier and Smetana is almost 3! Looking at our sales, we have an average of 60% returning guests each and every outing. And tomorrow my folks are leaving to visit our relatives abroad for 5 weeks. Nothing could personally be a surer sign of success than them feeling confident enough to fully step away from production. So here’s to everyone new and old for supporting us as we continue to evolve and improve each and every day. Thank you! 🍻🙏🏻❤️

☀️🥵 Summer is officially here and with that comes our seasonal charred corn pierogi. Always starting with our base of house-made farmer’s cheese, creamy potatoes, and caramelized onion, we add fresh corn “polenta” and a touch of mushroom to balance the sweet. Served w/ our smoked house-cultured smetana and freeze-dried corn, it’s basically the flavors of corn and bacon with zero meat. We’re here at tonite till 8 so come try some! 😋 🌽

Sometimes cooking is mostly curation. The simple choices regarding what products you want to showcase and why. That’s why we’re so stoked to work with to show off their non-industrially farmed heritage pork kielbasa and top it with sauerkraut. We used to ferment our own but I haven’t tasted anyone’s that’s better, and their worker-owned structure is something I really admire. Put those on a toasted real butter brioche bun and top it with our black-garlic-whole grain mustard and it’s done. Just a couple tweaks to already perfect products 😋

Among every dish we make, our Potato & Cheese pierogi will always be the cornerstone of what we do. Just simple, traditional ingredients done right in a way that sadly isn’t commonly found in the marketplace anymore. We culture our own sour cream, make our own full-fat farmer’s cheese, and fully caramelize our onions for hours on end. Then we cook each dumpling to order, searing them on only one side in clarified butter to show off our hand-made labor of love. Soon we hope to put them into the local market’s freezer section as well 🤞 Thank you for supporting us each step of the way over the last 2.5 years! ❤️

Winter Salad 3.0. Refreshing and simple. I’ve really come to appreciate how New England’s seasons force me to be more creative with what’s available when it gets cold (I honestly can get overwhelmed with Summer’s bounty and a garden overrun by squash 😆)

- Green apple and cured celery root salad w/ a pungent buckwheat honey-horseradish vinaigrette, crispy gf breadcrumbs, and toasted walnuts. Fully vegan if you eat honey and gluten free by default! 🐝 😋

New year, new duck. This Winter’s seasonal pierogi are filled with duck confit, goat cheese, celery root, marjoram, and orange zest, and are served w/ a toasted black pepper and pickled cherry jam. We’re experimenting with a duck bacon crumble for texture as well. Duck bacon is super lean—more like Canadian bacon for the uninitiated. We’ll see how it goes but each day we promise to try to make things better!

One of the first dishes I wanted to make when I started Smetana was schnitzel after seeing elevate it at Batard. Quickly it evolved into a modern, allergen-friendly, street-fare version using Japanese rice panko, leftover whey from making farmer’s cheese, and Polish preserved cherries instead of lingonberries. Mine is in NO way traditional but I believe just as satisfying. Backhendl, Tonkatsu, Israeli schnitzel, whatever you want to call it—mine is pounded and breaded free-range, organic chicken made as tasty as possible and it’s never coming off our menu 😋
