Here’s some unsolicited advice to young chefs:

If you grew up eating bread with butter and drinking Bush Tea, find a way to uniquely tell that story. Your difference is your superpower, use it. You would stand out amongst the rest. It would get you places.

Finally did it—hosted my very first solo dinner, Demo + Dine, at an immersive event, “Oxtails + Cocktails.”

16 years ago, my first industry job was at the as a dishwasher. Fast forward, and now I’m one of the chefs I once looked up to.

It was also amazing to see my professor, Jonathan Deutsch, who actually got me that job. I’ll never forget when he said, “If you’re serious about Culinary Arts, The James Beard Foundation is the place to be.” After the dinner, I caught up with my old boss, Kris Moon—such a full circle moment.

Huge thanks to my incredible team for making this all come together:

- with the vibes
- for the spirits
- for the cocktails
- for top-notch management
- for crushing it in the kitchen

Big love to the front and back-of-house crew—and to EVERYONE who helped make this event possible. You all killed it! Sindy, big up yuhself 😩😩

On another episode of Picky x Paddy Eats The Streets…we went to the Philippines via the Lower East Side at .nyc my favorite Filipino restaurant in NYC…

Here I’m indulging in the national dish of the Philippines (Adobo)…with the added Garlic Rice it was reminiscent of Pelau. I enjoyed EVERYTHING but this was my favorite.

SOME EXCITING NEWS….Quick 1 minute read

Before migrating to the United States 20 years ago, my only experience with Oxtails was in my grandmother’s soups on Saturdays in Trinidad 🇹🇹 Jamaican style 🇯🇲 Oxtails with butter beans were a new discovery for me, and I found them reminiscent of the Trinidadian stewed chicken I grew up with. This sparked my curiosity and led me on a journey to explore the many possibilities of preparing oxtails.

For years in New York City, the Jamaican style of preparing oxtails seemed to dominate, but I wanted to expand the narrative and showcase its versatility. This desire was realized with an incredible opportunity at where I launched a pop-up concept called Through this venture, I was able to highlight the diversity of oxtail preparations and share my passion with a wider audience.

THE EXCITING NEWS:
Fast forward to today, I’m thrilled to announce that I’ll be hosting my very first solo event, “Oxtails + Cocktails”, a Demo and Dinner, at the ICONIC I’m honored to be joined by a fantastic group of talented people that would be helping to make this the PERFECT evening:
