Hello!!! We have been a bit quiet, but are ready to once again. We have missed everyone but look forward to serving you. We enjoyed a wonderful Derby de Mayo party this past weekend with wonderful people, an incredibly fun time and fantastic food. Diamond C Cross fajitas and steak board were a hit and went along so well with the delicious food made by our wonderful friends. Good times with great people is what makes life so fun!

How can it be four years when it feels like it was just a few days ago. Daddy, to say I miss you is an understatement. Your stories, your work ethic, your love for our Lord, the love shared between you and mom, your love of desserts, especially ice cream, your love of music and classic cars...so many memories to treasure and I am beyond thankful that I am your daughter. I hope that as you watch over us you are proud of our accomplishments. We love and miss you and can only imagine the stories, love and laughter experienced in heaven with no pain and sickness. We have anticipated the season 4 premiere of so we had to have a themed dinner fit for the . To say the flavors are explosive is an understatement... bring the perfect amount of heat thanks to fresh jalapenos and the perfect mix of , beef, cream cheese and medium cheddar cheese all stuffed in a manicotti tube wrapped in bacon and smoked to perfection. Want a little more bang? Smother them in homemade or . To mix it up a little we chose thick, bone-in pork chops... with creamy, cheesy macaroni and cheese, twisted bread oh yeah and we can't forget the bacon wrapped and filled with sausage and cheese.

Trying out new recipes is always fun...especially when they turn out really good by using some of our favorite ingredients. The beat from gives us that deep beautiful red color which gives a hint at the depth of flavor we achieved. We also soaked our freshly ground and in Tequila. Storms come and go but they are not all bad...they can be scary with hard drops coming down fast and furious joined by bright lightning and loud thunder...they can be calm and peaceful with slow soothing rain and low rumbles. No matter the storm, they are followed by beautiful rainbows, rain kissed ground and the most beautiful aroma. God is always with us and continually protects us, comforts us and showers us with a multitude of blessings.

Everyday we have the opportunity to make BIG impacts with little acts of . chooses to do this through sharing our passion for cooking/grilling/smoking, grabbing any opportunity to for all to enjoy. Our menu consists of , with , , and . Truly, an act of love that is bursting with layer upon layer of flavor from and . Our pit was fueled by along with adding the perfect amount of heat and smoke.

SOUTHWEST GRILLERS
Small Beef Tenderloin marinated in then seasoned with and . Grilled perfectly to the high side of medium rare on over mesquite . Let rest for 10 minutes and then slice into medallions and serve. Every bite is tender, juicy and bursting with flavor.

GREEN CHILE CHICKEN STUFFED POBLANOS
Place the following ingredients in a bowl and mix well:
8 oz Cream Cheese - softened
1/2 cup - roasted and chopped
1 1/2 tsp
1/4 tsp

Next, stir in 8 oz Colby Jack Cheese - shredded

Finally add the following ingredients and mix well:
1 1/2 cups *Grilled Chicken - shredded
6 oz Bacon - cooked crisp and crumbled

4 Poblanos - roasted, peeled, seeded

Stuff each poblano with 1-2 Tbsp chicken filling. Top with additional shredded cheese and bacon crumbles. Place on hot grill and cook for 20 minutes or until filling is hot and cheese is melted. Serve with
