Someone asked me the other day why brisket at BBQ restaurants goes for $25 - $35 per lb and they can go to the store and get it for $4.99 per lb. I thought I would do my best to explain.
1. Shopping - Ordering - 2 hours of time
2. Trimming- Starting with 12lbs and removing at least 3lbs. - 30 min
3. Seasoning - 15 minutes
4. Building fire and getting smoker to temp. - 1 hour
5. Maintaining temp and cooking brisket. - 10hrs or longer (some 12 - 14hrs).
6. Resting the brisket - 2 - 8hrs
7. Slicing/Chopping/Serving - 30 minutes
8. Cleaning the smoker - 1 hour
Items needed (cost) - brisket, foil or butcher paper, seasonings, pans, wood, utensils (wear and tear).
Total time - 17 - 20hrs.
Starting weight of brisket 12lbs and final weight around 6lbs after cook.
There's more to it than people know. There is a big difference between a burger and a chopped brisket sandwich so enjoy that BBQ because someone worked really hard to make it.
