Nestled in the Snoqualmie Valley, the 818-acre historic farm property home to Carnation Farms has a deep history within the agricultural and greater Seattle community. In 1985 the Carnation Milk Company was sold by the Stuart

family to Nestle, along with the farm property. In 2008 the great grandson of E.A. Stuart, Elbridge Stuart III assisted in the purchase of the property on which a Paul Newman SeriousFun Camp operated programs for children with life-altering medical conditions. Following the campโ€™s departure from the historic farm in 2016, Elbridge Stuart III, Debra Stuart, Sarah Stuart Oderyd and Daniel Oderyd, inspired by E. Stuartโ€™s philanthropic legacy, founded Carnation Farms, a non-profit serving the community. Today:

The Tenacious Farmersโ€™ Exchange (TFE): Farming for a Climate Resilient Future is a two-day, farmer-led event focused on practical pathways for regenerating soil health, building farm resilience to climate change impacts, and implementing climate-smart agricultural practices for long-term viability and profitability of farming and ranching.

This event will bring farming experts from Understanding Ag, LLC to King Countyโ€™s beautiful Snoqualmie River Valley to share their farming knowledge and experience and tailoring their discussions to our regionโ€™s unique agricultural community and challenges. UAโ€™s instructors are real farmers and ranchers from across the U.S. with decades of combined experience in climate smart and regenerative agriculture.

Theyโ€™ll discuss the science and techniques related to implementing climate-smart practices, protecting and restoring soil health, enhancing resilience to flooding and drought conditions, boosting farm productivity, and more.

Accompanying the Understanding Ag farmer speakers are local agricultural professionals including representatives from WSDA Regional Markets Program, King Conservation District, King County DNRP-WLRD Agriculture Program, as well as local farmers participating as speakers and panelists, sharing their experience, challenges, and successes with implementing climate smart practices on their farms.

In case you missed it, here's Chef Schu's go-to Spaghetti Squash Carbonara recipe! Grab some squash at and save this for later:

1 Carnation Farms spaghetti squash
4 tablespoons olive oil, divided
8 ounces pancetta or bacon, cut into 1/4-inch dice
2 large egg yolks
1/2 cup water
1 tablespoon freshly ground black pepper
2 tablespoons unsalted butter, cubed
1/2 cup grated Parmigiano Reggiano cheese, plus more for serving
1/2 cup grated Ferndale Fontina, grated

Cut in half, scrape out seeds, drizzle with olive and sea salt.

Bake squash cut side down, in a 400 degree oven for 15-20 minutes. Once cool enough, scrape flesh with a fork into 'spaghetti strands'.

Meanwhile, cook pancetta in remaining 2 tablespoons of olive oil until lightly browned and crispy, about 10 minutes. Remove from heat; set aside. Add egg yolks, water, and freshly ground black pepper to a large saute pan, and whisk thoroughly.

Transfer hot squash โ€œspaghettiโ€ into the pan and add butter and cooked pancetta, along with all rendered fat in the pan. Toss thoroughly with forks until evenly mixed. If desired, reserve a tablespoon or two of cooked pancetta to garnish the top once the final dish is baked. Add the Parmigiano and fontina cheeses, and toss again. Taste for salt and add more if needed.

Return to the oven at 400 degrees F, until heated through, about 15 minutes. To serve, scatter reserved pancetta over the top and sprinkle with a little more grated cheese and parsley.

An accidentally gluten free holiday meal that everyone in your family is sure to love? Sign us up! Chef Kristen recommends a spaghetti squash carbonara using squash from the farm, local fontina, and of course our house-made El Puente hot sauce!

1 Carnation Farms spaghetti squash
