I pulled the first bulb of Garlic out of the Garden this morning!! Planted in late October, fed with multiple Mulch and Mushroom Soil dressings, Organic Plant food etc. This "seed" comes from my nephew Julian who worked on an Organic Farm in Michigan a few years back. Small Bulbs but huge, firm Cloves!! Some of the best Garlic I have eaten and or worked with!!!
The off the charts delicious Seared Viking Village Sea Scallops with Succotash and a light quick Beurre Blanc!! Umami deliciousness!!!!
A spectacular simple dinner last night!! Seared Viking Village Jumbo Scallops on a bed of Early Summer Succotash!!! As good as it gets!!!!
# After a ton of work by a dedicated team the Garden is ready to go!!! My best looking Garlic ever!! Various Peas, Tomatoes, Flowering Kale, assorted Cucumbers etc. Looking forward to planting the rest this Memorial Day weekend!!! Happy Memorial Day everyone!!!! We would not be here if it wasn't for all the brave souls, Men and Women, who sacrificed their lives for our Freedom!!!! And for all of our amazing members of the Armed Services, who protect us every single day!!!

The complete Dinner Plate!! So delicious!! The Golden Beet Horseradish is a first and definitely a new standard!! More Umami than Red Beet!! Yummy Goodness!!!!
A couple times a year, I long for my favorite soup of all time!! The Coconut, Lemongrass Soup from the old Siam Thai, my favorite local restaurant ever!!! We used to eat it there, order it for takeout, etc. It was simply put, perfection!!! I had all the key ingredients except for Galanga root. Fortunately, I had some powerful Ginger and fresh Lemongrass!! The key was some super thick and tasty Coconut Milk from Whole Foods!!! And a little Thai Red Curry paste, an ingredient that was recommended in a great recipe that I found a few years ago!! With some Palm Sugar and Thai Fish Sauce to round it out!!! Pure Umami deliciousness!!!!!
I had a hankering for Pad Thai!! One of my favorite not so simple dishes!! So satisfying!! Authentic Tamarind Paste makes all the difference!! Umami deliciousness!!!
After eating a lot of rich tasty Holiday Foods, it is time for something a little lighter!! Seared Sushi Tuna, organic Baby Greens and a supremely tasty Ginger Vinaigrette!! Oh, and some perfectly ripe Avocado!!! Here is to Umami Goodness for 2024!! Happy New Year to you all!!!!
After eating some supremely delicious Prime Rib for a few days after Christmas it was time to try something different!! BTW, if you want to re-heat Prime Rib, I think that I have come up with a great way to do it!! Wrap the Prime Rib in multiple sheets of Parchment paper, then wrap it in multiple layers of aluminum foil, heat it in a preheated 300 f oven. This allows the meat to reheat without over cooking the meat!!! Back to the photo, this is the beautifully cooked Beef, trimmed and sliced for the best "Roast Beef" Sandwich that I have ever made of eaten!!! Tonight's simple tasty dinner!! Eastern European "Soul Food"!! Caramelized Cabbage with Smoked Bacon, Onions, and Caraway Seeds!! Pan fried Kielbasa slowly cooked with the Caramelized Cabbage!! Served with sautéed Pierogies, melted onions and Ukrainian Sour Cream! So delicious and completely satisfying!!!
One of my favorite parts of Thanksgiving!! The day after "Thanksgiving Leftover" Sandwich!!! Starting with my Sourdough Raisin Walnut Bread, toasted and lightly buttered, Sliced Organic Turkey, Sausage Stuffing, Hellmans Mayonnaise and a tasty Maple Cranberry Sauce from !!!!!! And of course a little Sea Salt and fresh ground Kampot Pepper!!!! So supremely delicious!!
A few recent creations for some chef friends. My handmade no measurement Artisan Tools. I credit my Danish Heritage to these designs. They all come out of my head, aka my subconscious. Two Spaulted Maple pieces from a tree from my yard, the other piece is a piece of Zebra wood that has been sitting around in the shop for a while!!! So relaxing and so satisfying!!
Working on Pad Thai ex*****on!!! Wide Rice Noodles, real Tamarind Paste!! Wok fried veggies and scrambled eggs with the veggies, Bean Sprouts, Scallions, and Peanuts!! So very delicious!! As described, salty, sweet, nutty, sour. Not your usual flavor profile!!! Yet so very delicious!!!
An amazing dinner party with a wonderful Hostess, incredible guests and a stunning property!!! This was the Entrees Course, Roasted Pekin Duck Breast and Duck Confit "Sausage" served with French Lentils from Le Puy, Braised and Caramelized Belgian Endive, served with a rich Sundried Cherry Sauce!! Sublime deliciousness!!!!
Seared U-10 Viking Village Dry Scallops (definitely some of the best that I have ever eaten!!!), served on a Sauté of Brussels Sprouts, "Cheese" Cauliflower and late season Corn from with a Vouvray Corn Beurre Blanc!!! Supreme deliciousness!!!!!

One of my absolute favorite simple dinners!! Charred La Tortillas Factory Organic Corn Tortillas with Pork Belly, Grilled Pineapple, Cilantro from the garden, White Onions, Sea Salt and Fresh Lime!! Tacos al Pastor!!!
Last night's supremely tasty dinner!! I have reconnected with Panzanella, the simple, delicious Bread Salad" with late season Tomatoes, Dried Focaccia, grated Garlic from my garden, really good EVOO, a drop of real aged Balsamic Vinegar, Sea Salt and Kampot Pepper!!! Last night, I served it on a Baby Arugula Salad, so simple yet so satisfying!!!!
I was inspired to put together this Orzo "Risotto" last night, beautiful Mushrooms, Shallots, Frwsh Thyme, a splash of White Wine, some organic Heavy Cream, spectacular Reggiano Parmesan, a k**b of good butter, Sea Salt and fresh ground Kampot Pepper!!! Harmonious deliciousness!!!!!!!

#MaxHansenCaterer One of my favorite Meals of the year!! Happy St. Patty's Day!! Slow simmered Corned Beef in a rich Chicken Stock with pickling spice and aromatics. Once the beef is meltingly tender, I remove it and cook the New Red Bliss Potatoes, Savoy Cabbage and Organic Carrots!!! Served with a Roasted Beet, Horseradish (Kelchner's of course!!!) Sauce and a very few flakes of Maldon Sea Salt!!!! An Ode to the many spectacular Parties at Mellon, Webster and Shelly for 20 plus years!!!!
A very Happy Thanksgiving to all our Max Hansen Caterer friends and family!!! I hope that everyone was able to spend some relaxing time with your families yesterday!! One of my favorite days of the year, Roasting and Smoking Turkeys!! I am my father's son!! He would have been happy eating Thanksgiving dinner 365 days a year!!! Enjoy your Holiday weekend!!!
#MaxHansenCaterer . This time of year, I start Baking again!!! Here are a few highlights!! Chocolate Focaccia!! Totally insane, my very lively starter!! Probably the best looking (and tasting!!) loaf of Bread that I have ever baked, Raisin, Golden Raisin, Sun Dried Cherry and Walnut Bread (with a few teaspoons of Walnut Oil)!!! Supremely delicious, especially when toasted and well buttered!!! And lastly, a pair of Sourdough loaves, one plain and one Raisin, Walnut!! Happy Thanksgiving to all!!!
#MaxHansenCaterer Last night's Birthday Dinner with my beautiful wife Andrea and my wonderful Aunt Annsi Stephano!! We started with some off the charts Krug Champagne (Thank you Ralph!!!), with a perfectly ripe D'Affinois Triple Creme Brie. The First Course was Wild Mushroom Risotto with Fresh Porcini Mushrooms (Thank you Mushroom Chris!!), accompanied by an Aubert Chardonnay (Thank you again Ralph!!), it was a match made in heaven!! Followed by a Main Course of Grilled Cowboy Rib Eye with Grilled Radicchio, Grilled Porcini Mushrooms and a light salad!! Perfectly complimented by a 2013 Beaucastel Chateau Neuf de Pape, indeed again THANK YOU Ralph!! A wonderful Birthday!! Many thanks for all your Happy Birthday Wishes!!!
#MaxHansenCaterer The garden is still producing plenty of beautiful Tomatoes!! I made perhaps the best BLT I have ever eaten!! Perfect Tomatoes, Toasted "Everything" Sourdough Bread, Arugula, Heilman's Mayonnaise, S&P. Supremely tasty!!!!
Yesterday, I was enjoying the view from the back deck when this amazing experience took place!! I had recently cut some big Sunflowers and placed them around to feed the birds when this Goldfinch and her baby came and enjoyed some lunch!! Amazing to watch!!!!
#maxhansencaterer Grillin' and Chillin'!! A beautiful Ribeye on what used to be #bobbyflay 's old grill from Boy meets Grill!! Long but worthwhile story!! Spectacular Ribeye!! Bobby Flay's former producer used to live up the street. Unfortunately he passed away a number of years ago. His wife was looking for a home for this massive Viking Grill. I happened to be in the right place at the right time!! 10 hours of deep cleaning and a few new parts and she (Girl/Grill) works like a charm!!
