Hello Plateau family,

We hope that everyone is having a great Christmas so far!

We would like to apologize to those amazing clients that didn’t receive their charcuterie boards for Christmas.

As you all know, we experienced power outages for the last couple of days and we were unable to provide our services. It is our wish to always provide the best service to all of you, but this was out of our control.

We hope to continue to serve you well in future and thank you to those who have reached out to us and expressed understanding and support!

Do I keep my charcuterie box/board in the fridge?🤔
Yes, if you do not plan to serve
immediately. We do recommend taking the board out of the fridge 30-40 minutes before serving as it is best served at room temperature. 😊🧀

Good cheese – is a living product. If given a chance, it will develop mould – but that mould is rarely, if ever, bad for you. “Like the rind, it will pe*****te in a tiny way and may change the taste of the cheese very slightly,” says Iain Mellis, a cheesemonger of 40 years, “but it’s not dangerous.” Indeed, a streak of blue mould in a hard cheese like a cheddar is considered a good thing, adding complexity and depth. White mould should be cut off, says Hinds, simply because it will taint the flavour. Likewise brown and grey moulds are also best sliced off, but for taste reasons rather than health.

3 reason why we are NOT doing butter board 🫢:

Many of you have asked, “Are you going to be doing The Butter Board Trend?“
The answer is no, and here is why 👇:

Wanderview Hospitality is all about pleasing our customers and their guests, we are all about artistic presentations, new flavors, and not food trends, in this case, butter board. 🧈

For those who don’t know what it is, the concept is fairly simple. It’s a board artfully coated with soft butter and is topped with like honey, lemon zest, flaky salt, edible flowers, herbs and whatever you would like to add.
Think charcuterie board, but instead of meats and cheeses, it’s just butter. 🫣
Friends might gather around the communal dish, scrape the butter off the board and onto pieces of bread with a knife, or dip their bread directly into it.

1-Cross-contamination with many hands contaminating the butter board.

2-Consider the inability to sanitize a wooden board, with its micro-cracks and knife gauges that harbor pathogens such as E. coli and salmonella.

3-Could people become sick from a butter board, it is 100% possible, as people have become sick from contaminated surfaces and person-to-person contact.

What do I recommend instead? 🙂

Small portions, create your own tiny butter board.
Keep everything clean, cold, and conservative ― not too much at one time.

If you want to use a cutting board, choose it wisely.The United States Department of Agriculture advises using one cutting board for raw meat, poultry and seafood and a separate board for fresh produce and bread, so you might want to similarly avoid cross-contamination by using a separate platter for your butter.

As much as we love butter, we'd rather everyone have a fun and safe experience without any potential health risks.
