Brighten up your dishes with these zesty pickled red onions! Perfect for tacos, sandwiches, and salads. 🌮🥪🥗

Ingredients:
2 large red onions, thinly sliced
1 cup white vinegar
1/2 cup apple cider vinegar
1 cup water
3 tablespoons sugar
2 tablespoons kosher salt
1 teaspoon black peppercorns
1 teaspoon mustard seeds
1 teaspoon coriander seeds
2 bay leaves
1 garlic clove, thinly sliced
Zest of 1 lemon
Juice of 1 lemon
Directions:
Place the thinly sliced red onions in a heatproof jar or container.
In a medium saucepan, combine the white vinegar, apple cider vinegar, water, sugar, kosher salt, black peppercorns, mustard seeds, coriander seeds, bay leaves, garlic, lemon zest, and lemon juice.
Bring the mixture to a simmer over medium heat, stirring until the sugar and salt dissolve.
Pour the hot brine over the sliced onions, ensuring they are fully submerged.
Let the onions cool to room temperature, then cover and refrigerate for at least 1 hour before serving.
The pickled onions can be stored in the refrigerator for up to 2 weeks.

German Roast Beef Sandwich

Ingredients:
1 pound thinly sliced roast beef
4 slices German rye bread
1/4 cup Dijon mustard
1/4 cup mayonnaise
1 tablespoon horseradish
4 slices Swiss cheese
1 cup sauerkraut, drained
4 tablespoons butter, softened
Salt and pepper to taste
Instructions:
Preheat your oven to 350°F (175°C).
In a small bowl, mix together Dijon mustard, mayonnaise, and horseradish. Set aside.
Spread softened butter on one side of each slice of German rye bread.
Place the bread slices, buttered side down, on a baking sheet.
Spread the mustard mixture evenly on the other side of each bread slice.
Layer the roast beef, Swiss cheese, and sauerkraut on two of the bread slices.
Season with salt and pepper to taste.
Top each sandwich with the remaining bread slices, mustard side down.
Place the sandwiches in the preheated oven and bake for about 10 minutes, or until the cheese is melted and the bread is lightly toasted.
Remove the sandwiches from the oven and let them cool slightly before serving.

Grilled Cheese with Gouda, Roasted Mushrooms, and Onions

Ingredients:

8 slices of bread (your choice)
8 oz Gouda cheese, sliced
2 cups mushrooms, sliced
1 large onion, thinly sliced
2 tbsp olive oil
Salt and pepper, to taste
Butter, for grilling
Directions:

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
Place the sliced mushrooms and thinly sliced onions on the prepared baking sheet. Drizzle with olive oil and season with salt and pepper, to taste. Toss to coat evenly.
Roast in the preheated oven for 15-20 minutes, or until the mushrooms are tender and golden brown.
While the mushrooms and onions are roasting, assemble the sandwiches. Place slices of Gouda cheese between two slices of bread to form sandwiches.
Heat a skillet or griddle over medium heat. Spread butter on one side of each sandwich.
Place the sandwiches, buttered side down, onto the hot skillet or griddle. Cook until golden brown and crispy, about 2-3 minutes.
Flip the sandwiches and cook on the other side until the cheese is melted and the bread is golden brown and crispy, about 2-3 minutes more.
Remove the sandwiches from the skillet or griddle and let cool for a minute.
Open each sandwich and top one slice of bread with the roasted mushrooms and onions. Close the sandwiches and slice in half, if desired.
Serve immediately as a comforting and flavorful meal.
