Our Story

This Cajun and Creole inspired mobile restaurant, driven by the eclectic music and the food culture of Southwest Louisiana, is owned and operated by chef Johnny Schulze. Chef Johnny grew up in Baton Rouge and was trained as a chef in New Orleans. His restaurant experience is in fine dining restaurants in major cities: New Orleans, Atlanta, Hartford, Nantucket, and in Northeast Ohio. Chef Johnny has been serving his unique style of Cajun and Creole inspired mobile cuisine since the Spring of 2011.

We now offer our signature Zydeco Bistro sauce, Johnny’s MoJo hot sauce, and Zydeco Bistro Cajun/Creole Seasoning for retail. You can currently purchase them at the Bourbon Street Barrel Room in the Tremont neighborhood of Cleveland, Tremont General Store, Sonnets Cafe in Wadsworth, Al’s Quality Market in Barberton, and directly from Zydeco Bistro.
