Dinner menu from last nights dinner with good friends!
broiled shrimp with 1000 Island cocktail sauce, baked buffalo cheese dip with pita chips, black bean hummus with nann bread. Bib lettuce, boiled egg,red onion, fresh tomatoes, and black olive salad, scalloped potatoes, mesquite smoked beef brisket with guacamole, smoked brown sugar barbq chicken legs, garlic sourdough bread and milk chocolate macadamia nut brownie,white chocolate mousse and fresh raspberry trifle! Will post a few recipes in a few weeks!!!

Prep for suppers for this week recipes will follow! Crockpot minute steaks with gravy, mashed potatoes, fried corn,homemade sloppy joes with fresh tomato,red onion and red peppers. Eggplant prep for fried eggplant parmeasean and eggplant dip! Also made chocolate chip pecan and oatmeal raisin cookies

Crock pot Minute Steaks
4-6 minute steak
1 tablespoon meat tenderizer
salt and pepper
1 package au jus mix
1 package brown gravy
1 can french onion soup
Sprinkle tenderizer salt and pepper over steaks place in crockpot on lowest setting
Mix in medium bowl soup, gravy and au jus ( you can use a can of cream of mushroom soup in addition to french onion )
Cover minute steaks with sauce put top on crock pot and cook over night or all day!!

Moroccan Butternut Squash Soup
Recipe from Barbara Mayo

1 large butternut squash peeled and cut into 1 inch cubes
1 medium red onion sliced thin then pull apart to make rings
1/3 cup dark brown sugar
3 tablespoons Moroccan spices
4 tablespoons olive oil
4 cups vegetable or chicken stock
1teaspoon salt
1 cup heavy cream

Place cubed butternut squash and onion rings on foiled lined sheet pan. Sprinkle with spices and brown sugar then pour Olive oil over all and toss well. Place in preheated 375 degree oven for 20- 25 minutes or until squash is very tender.
Let cool on sheet pan for 10 minutes then place squash and onions in blender. Blend until smooth then add stock 1 cup at a time while blender is running.
When very smooth add heavy cream and salt pulse a few times and soup is done. Place in large soup pot on low heat to keep warm.
I use toasted pumpkin seeds to garnish!

Serves 4 to 6 persons

Just prepared prime rib for Christmas dinner.(I age my beef in the fridge for 7 to 10 days our family Christmas dinner is next Saturday)
Have a wedding to attend today so I put Chipotle cheddar chicken soup in the crock pot so I do not have to worry about dinner or lunch this weekend! Have to make 4 dozen cookies for Kids church tomorrow.I am baking decorative sugar cookie sticks!!

Here is my favorite fall to Thanksgiving dessert!!
Pumpkin Pecan Dump Cake!
Ingredients
29 oz can (or two 15 oz) pumpkin purée
1/2 cup brown sugar
1 can condensed milk
3 large eggs - beaten
1 1/2 Tablespoons pumpkin pie spice
1/2 teaspoon salt
1 box Butter cake mix
1 1/2 cup pecan pieces
3/4 cup (1 1/2 sticks) butter - melted

Instructions

Preheat oven to 350°.
Spray a 9x13 pan with a non-coating spray like Pam and set aside.
In a large mixing bowl, add the pumpkin, sugar,condensed milk, eggs, pumpkin pie spice and salt. Mix well until all ingredients are well incorporated.
Pour the pumpkin mixture into your 9x13 pan.
Sprinkle the dry butter cake mix on top of the batter.
Top off with a sprinkling of the pecans on top of the cake mix.
Pour the melted butter on top of the pecans.

Bake at 350° for 50-55 minutes.
Allow to cool for 15 minutes before serving
Spoon out a serving top with whipped cream of vanilla bean ice cream!

Here is my Mom's famous Coconut cake recipe!

Mom’s Coconut Cake

¾ cup shorting
2 cups sugar
½ cup milk
½ cup coconut milk
3 cups sifted cake flour
1 tablespoon baking powder
¾ teaspoon salt
½ teaspoon vanilla extract
3 eggs if you want a yellow cake
6 egg whites if you want a white cake

Seven Minute Frosting
3 egg whites room temp
½ cup water
Dash of salt
2 ¼ cups sugar
1 tablespoon light corn syrup
1 teaspoon vanilla extract
1 ¾ cups fresh coconut (I use fresh frozen) my mom cracked a coconut used the milk in cake and grated coconut for frosting!!!!
Creams shorting gradually add sugar; beat until light and fluffy if using whole eggs add now.
Combine milks set aside add cake flour, baking powder and salt stir well; add to creamed mixture alternately with milks ending with flour mixture. Stir in vanilla.
If using egg whites beat until stiff peaks and fold gently into egg whites.
Spray 2 9 inch cake pans my mom always cut wax paper to fit pans and used butter to grease wax paper.
Pour batter into cake pans and bake 350 degrees for 30 minutes. Cool cakes in pans for 10 minutes remove from pans and peel wax paper off Place on cakes on rack cool.
Make frosting by combining room temp. Egg whites water and salt in double boiler. Bring water to boil. Beat egg whites mixture until foamy. Reduce heat to low and gradually add sugar and corn syrup, beating on high for 7 minutes.
Pour mixture into large bowl add vanilla and 8-10 minutes until frosting is thick enough to spread. Fold ¾ cup coconut into frosting and frost cake then take remaining coconut and with your hands pat around sides of cake covering frosting and then sprinkle the rest on top

With it being MIM barbque week I am thinking of a mixed green (turnip,mustard,kale)slaw dressed with a spicy tarter sauce dressing with a barbq rubbed, panko breaded catfish filet on top garnished with deep fried whole okra!

This grand can cook! This morning I made girlfriend pasta salad, Asian chicken salad, amoretto brownies , and blueberry pie! Also, rolled 2 goat cheese logs in ftesh herbs ,cut up veggies to marinate in balsamic vinegar to grill for cristini for the weekend!

Well tomorrow ends the Measures of Joy Catering gig. I have enjoyed each and every job ,client and employees. I now plan to retire and become a Grand full time with my 3 beautiful grand children. Build our forever dream house with the love of my life and just enjoy life each and every day! I have been blessed to have had a job that was fun to do and enjoyed every minute to me it was a blessing ! Thank you all. I plan on writing a cookbook in the future an will keep my fb page up with new recipes in 2016!

Recipe request Salisbury steak in the crockpot.

Ingredients
2 pounds lean ground beef
1 (1 ounce) envelope dry onion soup mix
1/2 cup Italian seasoned bread crumbs
1 large egg gently beaten
1/4 cup all-purpose flour
2 tablespoons vegetable oil
2 (10.75 ounce) cans condensed cream of mushroom soup
1 (1 ounce) packet dry au jus mix
3/4 cup water

Directions
1In a large bowl, mix together the ground beef, onion soup mix, bread crumbs, and egg using your hands. Shape into 8 patties.
2Heat the oil in a large skillet over medium-high heat. Dredge the patties in flour just to coat, and quickly brown on both sides in the hot skillet. Place browned patties into the slow cooker stacking alternately like a pyramid. In a medium bowl, mix together the cream of mushroom soup, au jus mix, and water. Pour over the meat. Cook on the Low setting for 4 or 5 hours, until ground beef is well done.

Veggie dressing, chicken, Cajun molasses glazed ham, roasted brussel sprouts with shallots, sweet potatoes, honey butter baguettes, apple walnut salad and chocolate berry bread pudding with sea salt caramel sauce. And one party platter for Bowling Animal Clinic the best Animal Clinic ever!!

12 pounds of shrimp, fresh crab dip, french onion soufflé, chicken salad for phyllo mini cups and last of the 240 cocktail weeines in the oven!! Now on to 200 fresh fruit kabobs, shrimp cocktail sauce, ice ring for punch and chocolate sauce for fruit kabobs all this for one very special lady! Happy Birthday to my sweet friend Bettye Green!! Such an honor to do her 90th birthday open house!!

Great jobs this past week! Last Thursday art opening from Africa at Disciple Design great exhibit! Thanks to Lena and Lisa last night's Collierville's First Hall of Fame reception was a success!
