What an honor to have been nominated for the third year in a row for Hour Magazine’s Best Caterer. It’s been a wild ride, and oh so much fun creating a business and brand from scratch. I love learning about the culinary world, and I can say that I learn something new every day. My favorite part is delivering my ‘Beautiful Happy Food’ to my clients. Road to Chef update. Baking CUL 150 ✅. It’s a wrap! The grand finale was yesterday. I completed my practical & written final exam this week. Thank you Chef Gabriel & Chef Lisa for everything you taught our class, and for all of your patience with us rookies. I wrapped up with a perfect score on my Rosemary Olive bread, and my glazed Pumpkin scones. I couldn’t have done that without the support of my amazing instructors, and classmates. The experience opened up my love for baking. The day ended with my entire class cheering my daughter Reese on as she won the school spelling bee. We got a remote play-by-play from my great friend, Erika. 🙏🏼 And a party isn’t a party with out pizza! The Charcuterie class shared some delicious chorizo and pepperoni! Nothing but the freshest. Cheers!

Pumpkin Scones, Chocolate Chip Cookies, and Muesli Rolls, oh my! I’m in week 4 out of week 5, of my Baking Class, CUL 150. This week has been a get-it-done kind of week. Everyone in my class has worked so hard to get to this point. We’re all learning to be self sufficient with our recipes, and understanding the “why’s” of baking techniques. We have the best chef instructors, Chef Gabriel, and Chef Lisa! It’s going to be tough to say goodbye next week.

Road to chef update! Muesli rolls are on the menu this week. Today I made the preferment dough and roasted the seeds and hazelnuts for the fruit soaker. The fruit soaker consists of toasted sesame seeds, pumpkin seeds, sunflower seeds, chopped hazelnuts, and golden raisins. They call it a soaker because you soak it in water before adding it to the dough. More tomorrow.

Today felt like organized chaos, as I’m sure many kitchens do. Everyone was full steam ahead! Our class is like a well oiled machine as we’re all getting into our baking groove. Today I scaled Pumpkin Scones & Muesli, which took the entire 2 1/2 hours of class! Precision is a must in the baking world. Thanks for your help Walter! This week I’m baking Multigrain bread and Rosemary Olive Bread. A big day of scaling and prep. Once the scaling happens, the dough gets mixed. What I’m learning is that, the order you place the ingredients in the mixer makes a big difference in the outcome of the bread. I’m so glad I’ve already taken Culinary Chemistry. The dots are connecting. Also helps that my kids are learning chemistry too. When studying together we all learn from each other 💖💙👩🏼‍🍳

Coffee Cake was a fun surprise from today’s class. We also made danishes, and with the extra dough left over from the danishes, we made this apple, cream cheese, crumble coffee cake. Just like my childhood days on our family farm, nothing goes to waste in the bake shop. Visit the cafe at Schoolcraft College (it’s open to the public) and treat yourself to some seriously fresh and delicious baked goods. Everything we bake is sold there. 😋🥐🥖

The moment you’ve all (me the most) been waiting for….ta-daaaa! Chocolate croissants. 🥐 🍫. I learned the chocolate croissants are shaped different than your traditional croissant. These guys are so fun to make. Lots of patience required, but so rewarding in the end. Walker, Reese, & Caden…chef let me bring one home for each of you. 😘 I’m feeling very accomplished. 👩🏼‍🍳

Road to Chef update…today, our class made all kind of goodies, but this one we got to take home. Oh man, did it deliver on flavor!! Pesto, Sautéed Spinach, onion, and pine nuts scones, with three different cheeses laminated inside. These aren’t your dried out boring store bought scones. I have a new found love for these guys! They were moist, full of savory flavor and felt like a meal. I’m definitely making these at home! 😋

Croissants are on the menu today. Two days of prep leading up to the assembly and baking of the finished product. I have no idea how I’d make these at home, due to the complexity of laminating the dough. However, I have a whole new appreciation for the French croissant, involving three days of prep work. So light, flaky and buttery. Completely worth the wait! 😋🥐💝

I’ve always wanted to learn how to make sourdough bread. It’s absolutely my favorite bread. Avocado toast anyone?!?🥑🍞 Meet Gerald, the 5-year-old Sourdough starter made from wil blueberries! Had no idea this was even possible. 🤯 not only that, but this guy has been fed daily to keep healthy and usable. The commitment!! Today, we learned how to create, ferment, and shape the dough for a sourdough loaf. Tomorrow, we bake! Can’t wait to see and taste the results!
